When making a fish cake or a chicken cake do you have to add egg to make it stick/hold together?!

You do need to use an egg to make it bind together and make it less likely to fall apart. I always crack an egg into a container with a tight fitting lid, then shake it till it's all yellow. Then I pour it into the mixing bowl with the other ingredients.

If you are on a low-fat diet, use 2 egg whites for every whole egg when you substitute. Otherwise, use the whole egg, white and yolk.

The only way it will taste like egg is if you use too much egg or don't mix the yolk and white completely by shaking it in a container or beating it with a whisk or fork.
