What part of a green onion do I use?!
Answers: The recipe says to chop 5 green onions. Do I use just the white part? Or the whole thing??
I always go by the dictum that the white part is like an onion and the green part is like an herb (chives). The white part is stronger tasting and more oniony while the green part has a much milder taste. You can use both in recipes or one or the other depending on how much onion flavor you want.
See, that depends on the recipe. If you are making, say, scallion pancakes, then you use the tops. If you are making something tex-mexish, use the bottoms and tops. It all depends on the flavor you want. The bottom seems more oniony to me. And don't use the VERY top... I always take the tips off. In any case, these can be used where chives are needed. I would think if it says to chop green onions and doesn't specify, use both top and bottom.
You can use the whole onion, but traditionally the green part of the onion is served cold as a garnish or mixed into salads and the white part is used in cooking, but you can use it either way. I do:>

Use the green parts, slice across the green tubes very thinly. Then do part of the white part, or all of it if you don't have people snatching the bulb part off the cutting board like I do.
All of the white and just some of the green, I stop when it gets to all green.......sometimes the ends can get rather tough.....unless you're using them, say in an Egg Drop Soup.....then I use the entire thing, just cut about an inch off the top and use the rest........For like, say, chicken salads, I just use the white and about 2 inches into the green........Slice them on the diagonal and you'll get better results.......

The white part has a stronger flavor than the green part, so you can use that knowledge to control the flavor.
As an aside, you can plant the roots in your garden and grow your own onions.
The whole thing. Some recipes will tell you what part to use and if it says chopped green onions it means the whole onion.
well, after you peel the white part and chop off the top of it, then you will chop up through the white and green until about 1/4 from the top of it!
I trim about 1/2 inch off the tops then cut off the root and use the whole onion. There's lots of flavor in the green part. I use them in salads, omelets and they're great on mashed or baked potatoes.
Unless the recipe specifies just a certain part you usually are meant to use the whole thing.
5 green onions would be 5 stalks of the green part.
