I want to cook a healthy but hearty meal and suggestions?!

Lemon pepper chicken, risotto, oven roasted green beans and asparagus.
Drizzle a little olive oil on skinless boneless chicken breast, place them on a cookie sheet, squeeze half a lemon over the the chicken and sprinkle with fresh black pepper, cover with foil and back for 30 minutes a 350.
Risotto takes about 30 minutes to cook but well worth it. It is arborio rice and the directions for cooking it is on the container.
Now the veggies, buy fresh asparagus and long green beans, wash them thoroughly and pat them dry. Hold the asparagus by both ends and bend until it snaps making sure you throw away the cut end not the pointed end. Lay the veggies on a cookie sheet drizzle with a little olive oil, sprinkle lightly with salt and pepper then bake uncovered for 20 minutes at 350. The chicken and veggies can be cooked at the same time and the whole meal is done in 30 minutes and is finished at the same time so ever thing is still hot when you serve it. I made this and every one loved it.

How about baked boneless turkey or chicken breast seasoned with whatever you like, steamed veggies, with maybe some rice or garlic potatoes, or a big salad with romaine lettuce, black olives, sliced roma tomatoes, peppercini peppers, feta cheese, and greek salad dressing.

soup is a very filling meal, and many soups are very low in fat. Grilled chicken can be served with a variety of vegetables to make a tasty but healthy meal. and salads are always a good option

Pot roast in the crock pot made with an eye of round roast and some red wine in the broth with baby portabellos, baby carrots and potato wedges thrown in about an hour before serving. Serve with some whole wheat artisan bread and a dollop of horseradish. This is about as hearty as it gets but there is nothing unhealthy about a lean roast. If you dont know how to make a tasty pot roast let me know.

Any oil you need to use should be Canola Oil, and any butter should be Margarine. Any meat should be real meat, as I like to call it, meaning Chicken, Turkey, Beef, Fish. No Sausage, or manmade products.
The meat should be skinned and boneless, should not be fried at all. Should be either baked, broiled, or boiled.
I would consider a stuffed chicken breast ( skinned & boned). Iwould stuff it with green vegetables cut really, really thin ( think Japanese style vegetables).
I would Broil the wrap, and make a sauce for it. Perhaps an Alfredo Sauce made out of Parmsan Cheese & skim milk.
You will not need to make a lot of this sauce, you won't be using a lot anyhow.
Next, what will we have with it, I'd possibly consider rice, and a sauce to go over it too. Again, you won't be using much of the sauce so won't need to make a lot. This time I'd consider a tomato based sauce for the rice. I'd serve 1/4 cup of cooked rice and two tablespoons of the sauce.
Maybe have a mini garden salad with Italian dressing. I'd go with 1/2 cup of salad & 1 Tablespoon Dressing.
Fruit for desert? Vegetables with Yogurt dip?
Sorbet for desert? Hmm..it depends what the mood for this meal is I guess.
