How can I make my own veggie burger?!
Answers: I'd like to make mine from scratch (real veggies)!
1 package (12 ounces) frozen pre-browned vegetable protien crumbles, thawed.
2 eggs, lighly beaten
1/4 cup dry breadcrumbs
1/4 cup finly chopped onion
Vegetable cooking spray
6 whole wheat hamburger buns, toasted
Combine vegetable protien crumbles, eggs, breadcrumbs and onion. Shape mixture into 6 burgers. Spray large skillet with cooking spray. Heat over medium heat until hot. Cook burgers until browned, about 5 minutes on each side. Serve with buns.
OR
1 (15 ounce) can kidney beans, drained,and rinsed
1/2 cup rolled oats
1/2 cup mushrooms, finely chopped
1/4 cup onions, finely chopped
1 carrot, shredded
1/2 cup red bell peppers, chopped
1 clove garlic, minced
2 tablespoons tomato paste or ketchup
1/2 teaspoon salt
pepper, to taste
Throw all ingredients in food processor (or blender, if you dont have one). Pulse (or blend) until coarsely chopped.
Chill mixture, then shape into four (4) 1/2-inch thick patties.
Now you can wrap and freeze them for later. To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle). You can do this in your broiler or on the grill. Serve like you do your favorite meat patties!
Start by making Falafel, a kind of Middle Eastern burger made with chickpeas and spices. Proceed from there by adding whatever veggie you want that's finely minced. At some point, you may need to add flour or beaten egg to keep the veggies together.
Get the veggies you like, include some cooked rice and soy beans or other beans.
Stick it all into a blender, blend it up til it's chopped fine, and then add an egg. Mix it all in, take out balls and form into patties.
Ba-da-boom.

3 tbsp. flour
Salt and pepper to taste

Mix all the ingredients together, shape into patties. Heat some oil in a skillet, brown patties on both sides. Place in a baking pan and bake 25-30 minutes. Top with a slice of Cheddar cheese 5 minutes before done. Great with mayonnaise, lettuce, tomato, and the works.

"Burger" night at home - without the beef, of course - can be a quick and easy meal that's very nutritious, too.
There are many versions of frozen, ready-to-cook vegetarian burgers on the market, and most are very good. But don't count out a homemade veggie burger as being complicated and messy to make. It's not - depending upon the recipe you select, of course.
While searching for something different to make one evening, I came across a recipe for veggie burgers made with ground garbanzo beans as the key ingredient.
Before going on about the burgers, you should know a little something about garbanzo beans, starting with the name. Perhaps, you know them as chickpeas or ceci beans, but whatever you call them, they are legumes.
These larger-than-pea-size roly-polies are exceptional sources of nutrition. Starting with very little fat, they are packed with protein, slow-burning complex carbohydrates, fiber and folic acid. With a mild, creamy taste, they are a versatile ingredient for just about any recipe you can think of - straight from the can to top a salad or cooked from the dried-bean form for use in a hearty soup or stew.
So, given all that information, along with the simple fact that garbanzo beans are yummy, turning them into a burger sounded like a great idea.
I decided to jazz up the basic recipe I found, adding more flavorful spices to the mix. Feel free to add or subtract spices, making the mixture more to your liking.
Garbanzo Burgers
1 (15-ounce) can garbanzo beans, drained but not rinsed
1 1/3 cup rolled oats
1 cup water
1/2 small onion, minced
1/4 cup finely chopped mushrooms
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/8 to 1/4 teaspoon cayenne pepper or paprika (more to taste)
11/2 tablespoons soy sauce
1 to 2 tablespoons olive oil
6 whole-wheat buns
Place beans in a food processor and run on low until beans are crumbly like ground meat. Transfer to a large mixing bowl and add the remaining ingredients, except the olive oil. Combine and let sit about 10 to 15 minutes, until all the water is absorbed. Mixture will be rather mushy.
To shape patties, scoop generously into a 1/2 cup measure and lay out on a piece of waxed paper. It should make six large patties. Slightly pat down each patty to shape, if necessary.

INGREDIENTS
1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs
DIRECTIONS
If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
In a medium bowl, mash black beans with a fork until thick and pasty.
In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

Buy some textured vegetable protein (TVP) in the supermarket. It ought to be with the specialty flours. Mix with smashed soy, kidney, and garbanzo beans, and flavor with barbecue sauce.
