Marinades for chicken kebabs?!
And other ingredients to put on other than just pepper & onion?
Answers: Planning making chicken kebabs tonight, anyone help me out with marinades?
And other ingredients to put on other than just pepper & onion?
olive oil
garlic
Rosemary (from the sticks)
use the sticks as scures
and rap the kababs in bacon the cook
:)
(garlic cloves)
Chiken Kabob ( Shish Taouk)
1 pound boneless skinless breasts, cubed
1 garlic clove, peeled and crushed, 3/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon allspice
2 tablespoons best quality olive oil
3 tablespoons lemon juice
In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover
and marinate the chicken for several hours in the refrigerator
Thread onto pre-soaked wood or metal skewers.
Grill over medium charcoal fire, basting and turning several times, until delicately browned.
Chicken lends itself well to almost any flavor/marinade, a mild teriyaki or something with a "smokey" flavor will do nicely. As for other ingredients, why not some egg plant, Portabello mushrooms.
my mom gets a spicy tadoori masala which has chilli, salt and some powders of crushed zeera and fenugreek anf some mint
heres some....
Ingredients
Boneless chicken - 500 gm (cut into 3/4 inch cubes)
Curd - 50 gm. (without water)
Onion paste - 1 tbsp.
Fried onion paste - 2 tbsp.
Garam masala powder - 2 tsp
Coconut paste - 2 tsp
chaat masala - 1 tbsp.
Red chilly powder - 2 tsp
Oil
Salt
Method:
1. Mix all the above except salt and oil and marinade for 3-4 hrs
2. Mix salt and oil, put on seekh (skewers) and grill it till turns golden red.
3. Sprinkle some chaat masala. Serve with onion rings, lemon pieces, and sauce
Okay, my first question to you is do you have a grill? If not it would work perfectly in a oven:
Easy, fast recipe
4-6 chicken thighs/legs deboned and skinned
1 cup of your favorite bbq sauce
2 tsp of paprika
1 tsp of honey
If you like it hot, I would add some red pepper flakes, or hot sauce
1 tsp pepper
Marinade for 2 hrs or more, best if over night
Assembly: Since you have peppers and onions, i would cut them into big chunks and salt and pepper them
For me the combo would be, chicken, pepper, chicken, onion, etc. this part doesn't really matter
If using an oven, I would have it at 400 degrees for 20-25 min until its internal temp is 160 or when poked, clear liquid comes out
If using a bbq, put the kebabs in the hottest place on your bbq, flip after 5 min-6 min per side
(Squirt of marinade on the side) BBQ sauce, honey and pepper flakes
This is my own recipe:
Garlic (fresh or dried granules)
Salt
Pepper
Mustard Seeds
Thyme
Smoked Paprika
Worcestershire sauce
Olive oil
Chilli powder (optional)
Combine all ingredients and allow chicken to marinade for as long as possible, overnight is ideal but a couple of hours is fine. Skewer the meat and add whatever you like, I usually use cherry tomatoes and mushrooms. They are best cooked on the BBQ but it's not exactly the weather for that at the mo so I use my George Foreman Grill.
