Need to make dinner for my BF tonight. Help!?!
What can I make for dinner that is inexpensive and quick??
Answers: I don't have much money to spend on the groceries and I don't want to spend forever slaving in the kitchen.

Try this Chicken Parmesan. Also, buy a ceaser salad mix and follow the easy dessert. Buy generic brand ingredients and you can have this whole meal for about $15 AND have leftovers! ENJOY!
Easy Chicken Parmesan
INGREDIENTS
1 jar spagheti sauce
1/2 cup cornflake crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley flakes
6 boneless, skinless chicken breast halves
1 egg, beaten
2/3 cup shredded mozzarella cheese
DIRECTIONS
In a microwave-safe bowl, add the spagheti sauce. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside.
In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes.
Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear. Place over cooked noodles

Make something simple but yummy..............how about baked chicken with spices and spaghetti with sauce...........for dessert you could have chocolate dipped strawberries.....delicious AND romantic......
Take a chicken or turkey cutlet, fill it with some steamed or lightly sauteed green/red/yellow peppers, roll up and top it with parm/romano/or an italian blend cheese, and bake. Don't forget to drizzle with olive oil before topping with cheese. And freshly ground pepper and coarse salt. YUM. Serve with some simple cous cous and salad. Easy and quick.
Shepherd Pie is relatively cheap and easy to prepare.
Hambergers (use ground chuck, it's more flavorful), baked potato (Poke 4 times on each side, wrap in paper towel, and microwave), and a lettuce and tomato salad with italian or ranch dressing.
what about some crepes? they're easy and quite cheap. You'd only need flour, margarine (or buttermilk), milk and eggs. You could stuffed them with jam and double cream cheese or with something salad as well. You could also serve them with some vainilla ice. Very nice.

Chicken quesedillas or veggie burritos with refried beans?
Your Smiling Chef Taco Delight (serves 4 or 2 with leftovers)
Your Ingredients:
1-1/2 pounds ground chuck
1 envelope of Lawry’s Taco Spices and Seasoning Mix (or substitute your own favorite mix)
1 cups water, about
1-1/2 tomatoes, washed and chopped
1 small Vidalia onion, washed and chopped or...
2 bunches scallions (long green onions), washed and ends trimmed
1 package shredded lettuce for tacos (it’s in with the ready-to-eat salad greens section)
1 cup sour cream
1 bottle hot sauce (on the side)
whole jalapeno peppers, washed (don't be a baby)
shredded Chihuahua or Pepperjack cheese (or both)
1 jar Jardinière (hot or mild on the side)
1 packages fresh corn or flour tortilla shells (I like to use 2 shells per taco) or...
1 package hard shells (like the ones from Old Paso)
HEAT a skillet over medium-high heat.
ADD ground chuck and stir frequently (I like to stir with a fork to break up clumps of meat while browning), making sure meat is thoroughly cooked through.
WHEN ground chuck is nice and brown, drain it in a colander to get rid of the fat.
RETURN meat to the pan and add the envelope of taco seasoning mix along with about a 3/4 cup of the water. Stir well. You should have about 1/2-inch of liquid above the meat mixture. If you don’t, just add more water.
WHEN mixture reaches a boil, lower heat and cover with a lid and simmer for about 30 minutes, stirring occasionally. When the liquid in the pan has reduced, turn off heat and let the mixture rest while you’re preparing your other ingredients.
ARRANGE your tomatoes, onions, scallions, shredded lettuce, jalapeno peppers and cheeses on an attractive serving platter. Place the jardinière and sour cream in separate, small serving bowls and the hot sauce on the side.
HEAT a separate dry skillet on medium-high and place tortillas in just long enough to warm through, about 1 minute per side. Or, you can warm them in your microwave for a minute or so. Keep warm in a covered bowl unless you have a fancy tortilla warmer.
TRANSFER ground beef to a covered casserole dish.
PLACE prepared meal on your dining table and don’t forget the hard taco shells.
SIT down and enjoy!
Note: If you’re in the mood (and have the time and money) for more fiesta stuff, use a fiesta-themed paper tablecloth with matching plates, cups and napkins.
You could also serve Spanish rice and refried beans on the side along with freshly prepared guacamole. Add a pitcher of margaritas.
Both of you could wear sombreros! Well, maybe not. But you’ll have one heck of a grand ole dinner party!
Always Enjoy!
