How do I get bread rolls to be crispy?!


Question: I make my own bread including rolls but although the results are always good and really tasty. I would like them to be more crusty on the top.

the secret to a good crust is to make sure that your oven is very humid

after putting in the dough, I would use a spritzer to spray water into the hot oven before closing the oven door.

putting a small baking tin of water in with the bread would also work

toast them

brush them with egg whites before baking

cook them a little longer

leave them in the oven or toaster longer

Brush with an egg glaze to make crispy

My mum always cooked them and then ran them under water and returned them to the oven for a few minutes to crisp them up.

And don't brush the done bread with any emollients like butter or OO, they will soften the bread.

just before you put them into the oven, sprinkle some tepid water on the top, don;t soak them or use a pastry brush and lightly put the water on i just use my fingers to sprinkle them.

Bakers spray lightly them with water half way through the baking cycle still inside the oven. My father is a baker.

Brush with cold water before putting them in a hot oven. Mmmmm, can smell them already
