Add a little bit of salt water 5 minutes before you stop cooking them.

Rub olive oil in first, then salt ...... preferably sea salt.

Otherwise cut it off, cook the pork.

And crisp the skin up under the grill while the pork is resting !!

pork skin is made super crispy by deep-frying it. it's messy and takes a lot of fat/oil. usually done on a large scale to make chicharron

Salt is the key. It draws out the liquid and crisps up the skin.

Make sure it is dry of all water, then as suggested salt it and use olive oil..........when the fat has rendered in the pan baste it with this and it should sizzle a little as the fat will crisp it up. If all else fails, put it under the broiler for a few minutes after cooking.
