How do you cook London Broil without making it tough and dry?!

Question: One trick I read on cooks illustrated is to put the London broil in a ziploc bag and immurse it 10-15 minutes before you cook in warm water. this will bring down the temperature of the meat so you do not have to cook it as long. You should also make sure that you do not cook the London broil past medium. the last trick is to slice the meat against the grain and slice it very thin. this is the most important part.

if it is tough and dry you are over cooking it........mine always turn out great

I bake it at 350 covered for about 2 hours......until it falls apart. You can marinate it in garlic, salt, pepper and balsamic vinegar. It won't have a strong vinegar taste, it sort of cooks out. Good Luck.

I marinate mine and the less you cook it, the better it will be
