make some lasagna. I made some for xmas, they were out of skim milk ricotta, so I had to buy the big tub of whole milk ricotta -- what a great batch! Between a thicker layer of cheese and the whole milk it was the best batch of lasagna I ever made.

Chili
Ray's chili:
Brown one lb of 70 to 75% beef (can be cooked without beef too) in a deep pan;
Add half of a small onion chopped after meat's red-raw-look is gone;
Add large can Hormal chili without beans;
Add small can Hormal chili with beans;
Ro-Tel, medium or mild found in the tomato section at the store;
1/8 to 1/2 teaspoon garlic powder is you have it. Chili is good without it;
Cook about 50 minutes on low or simmer.
Be sure to stir every 15 minutes and watch the clock or it will burn.
I didn't hear that, hope it's not in the NorthEast : ( Anyway when we bunker in I always have lots of snacks on hand. But good snacks to watch movies with. One of our favorites is spinach bread dip. It's easy and so good. The recipe is on the back of Knorr's vegetable soup mix box.
Another thing I do is a fake lasagna, great fresh out of the oven and reheated. Simple. Boil 1 box of ziti until it's almost done. Then mix with 1 large jar of spagetti sauce (I actually use 1 1/2 jars of Newman's own marinara - they don't have large jars), 1 pack of half moon sliced chicken sausage (but you can use any meat), 1 small container of ricotta cheese, about 1/2 c. parm cheese, and 1/2 bag of mozz cheese. Bake at 350 for 1/2 hour covered. Then uncover top with the rest of the bag of mozz cheese and bake in the oven until golden brown. Tastes like lasagna, but not with all the work.
Another goodie, but a lot of work is scalloped potatoes with chunks of ham. I love it, but hate slicing all the potatoes it takes.
Nothing as easy as grilled cheese and tomato soup. That's a perfect cold day lunch.
This sounds weird, but it's really good. Basically it's just a stuffed bread. Sautee up 1 small onion and a few cloves of garlic in olive oil. Then add about 1 lb. of hamburger (if you have a butcher near by it's better with equal parts Italian sausage and hamburger) and cook. Then add 1 large can of diced tomatoes, and season the way you like. Generally I use about 1 tbsp. of salt, pepper, and oregano. Let this simmer down until it gets really thick on a low heat. It takes about 20 minutes. Then hollow out a loaf of Italian bread and toast in the oven on 400 about 10 minutes. Just until golden brown. Let me say you have to cut the loaf in half, but not, basically cut the top off as close to the top you can. Then leave about 3/4" of bread around the sides when you hollow it out. Layer the bottom of the bread with sliced mozz cheese, about 2 slices thick, then the meat mixture, then another 2 layers of cheese. Put the top back on and wrap in foil paper. Then bake at 400 for about 15 minutes.
