How about an Italian dinner? Is very romantico,no?

Prepare chicken (boneless) breasts like this
4 halves boneless chcken breast
1/4 mayonaise or salad dressing(Miracle whip)
1/2 cup or more, if needed seasoned Italian breadcrumbs

Spread mayo on each side of chicken to cover and then shake them in a plastic bag (one at a time) with the breadcrumbs. Place on a nonstick cooking sheet and cook in a 400 F preheated oven for 15 minutes, turn chicken over and then cook for 10-15 minutes more.

While chicken is baking boil your favorite pasta, Angel hair is my favorite but spaghetti is fine.Drain and toss with a little butter or olive oil. Keep warm.

Now you can make a red sauce or you can use a jar of marinara sauce. Whatever you have on hand.

Here is a quick sauce to make. I would make this before you start the chicken!

INGREDIENTS
4 tablespoons olive oil
4 cloves garlic, minced
1 small onion, chopped
1 (28 ounce) can whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
3 teaspoons dried basil leaves
1 teaspoon white sugar
salt and pepper to taste

DIRECTIONS
In a skillet over medium heat, saute garlic and onion in the olive oil; about 10 minutes. Break apart the whole tomatoes with your hands and add to the pan along with the crushed tomatoes, basil, sugar, salt and pepper. Cover and simmer 20 minutes, stirring occasionally.

Make a green salad and get some breadsticks or italian bread.

To serve the chicken and pasta, cut the chicken in slices diagonally and arrange then on top of the pasta and sauce on each plate, sprinkle with grated parmesean cheese.

Hope your parents will have a nice dinner!

Cook their favorite dinner. I like chicken cordon bleu. It is easy to make and very good. They will think you worked real hard to make it, but really it is simple and easy. Try searching on Kraft Foods web site. All of the recipes on the site are very easy to make. Good Luck! http://www.kraftfoods.com/kf/recipes/rec...

Well, you could make a salsbury steak, with eith mash potatoes, or red bliss roasted potatoes, and lemon garlic sauteed string bean beans. or if you have chicken cutlets stuff them with stuffing, and have some Uncle Ben's wild rice, and the vegee I said above.

CHATEAUBRIAND BURGERS I've found when I use 90/10 hamburger, there isn't as much liquid.

90/10 is 90% lean meat and 10% fat. You might be able to get away with 85/15, but anything less than that is very, very "iffy".

You could add a little bread crumbs to the mix, salt, pepper, Worcestershire, a dash of Tabasco sauce or hot sauce and some garlic powder.

Want to hear "WOW"? Make a Chateaubriand Burger.

One BIG hamburger for 2 people. Having more than 2? Make a larger burger. Cook it to the desired doneness. Let it "rest" [leave it on the counter so the meat relaxes and the juices get evenly re-distributed through the burger. for about 10-15 minutes.

You could put it on a big platter with mushrooms, sauteed onions [or breaded onion rings], a couple of canned or fresh green veggies and homemade mashed potatoes on the border of the platter.

Some candles and their favorite music! You'll get many well-deserved WOWS!

"Carve" it at the table. Serve it with their favorite beverage. Slip out the door, leaving a note you'll be back the next day to clean up the mess. Let them enjoy.

Thanks for asking your Q! I enjoyed answering it!

Yes, that is my real last name!

If this is going to be a romantic dinner for two rather than a family meal, let me suggest you set up a small table for two and two chairs in their bedroom, or some other room where they can have some privacy. You act like a waiter in a good restaurant and seat them, then serve them quickly and efficiently, without spending lots of time looking over their shoulders. they can give you their compliments the next morning.

As for a menu, try this:

Make a salad using bagged Spring Mix Salad greens, add some dried raisins, croutons, some freshly grated Parmesan Cheese, some grated Cheddar Cheese, and some Goat Cheese, topped with their favorite salad dressing. Have some bread sticks or crackers on the side. Serve with cocktails or a red wine.

For the main course,
Chicken in the Heather served on a bed of white rice, with steamed Broccoli or Asparagus with Cheese Sauce

Chicken in the Heather
“Doc” Hudson

Ingredients:
One whole chicken, minus giblets or two Cornish game hens
3 fluid ounces (6 TBS) light cooking oil
4 fluid ounces (half cup) clear heather honey
Salt and pepper (freshly ground black pepper if you have it)
3 ounces (6 TBS) Grainy mustard
Half teaspoon curry powder
One clove chopped garlic

Method:
Place the chicken in an oven-proof casserole dish. Mix all the other ingredients together and pour over the chicken. Cover the dish and cook in a pre-heated oven at 375*F (190* C or Gas Mark 4 for folks on the metric system, and Britons) for an hour. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered. The chicken will brown as a result. Serve with boiled or creamed/mashed potatoes and fresh vegetables, or on a bed of rice.

With the main course, serve either some breadsticks, made from the canned dough, or some good yeasty roll from the bakery department.

Serve their favorite wine with the meal.

For dessert, you can either go very simple, or a little extravagant.
For simple, make some Chocolate Pudding from Scratch, serve it in small custard dishes with a dollop of whipped cream and some shaved chocolate on top.

If you want to go a little extravagant, I have two suggestions, both of which are fairly easy to make but make a great impression.

The easier to make is a variation of Tiramisu that my wife developed, we call it Marciamisu.

Marciamisu

5 extra large egg yokes
5 tablespoons sugar
1 & 2/3 cup mascarpone cheese (or cream cheese), chilled
1 & ? cups heavy cream, chilled
? cup brewed strong coffee
? cup coffee liqueur
24 Kebbler Vienna Fingers cookies
Raspberries, optional
Dutch-processed cocoa

In a bowl, using an electric mixer set on high, beat yokes and sugar 5-7 minutes. Add cheese and beat another 3-4 minutes. In another bowl with clean beaters, whip cream until soft peaks form. Fold cream into yolk mixture.

In a small bowl mix espresso and liqueur. Brush espresso mixture on both sides of Vienna Fingers. Arrange the Vienna Fingers in single layer over bottom of decorative bowl. Continue until all is used. Cover; chill 6 hours to 2 days. Sift chocolate over top using a fine mesh sieve.

The other fancy dessert it a little more complicated, but I think it is worth the effort. The dish is called Chocolate Hazelnut Pots.

Chocolate Hazelnut Pots

Ingredients:
2 Eggs 2 Egg Yolks
1 TBS Superfine Sugar 1 tsp. Cornstarch
2 ? cups Milk 3 ounces Dark Chocolate
4 TBS Chocolate &
Hazelnut spread (Nutella)
To Decorate:
Grated Chocolate or large chocolate curls
Whipped Cream

1. - Beat together eggs, egg yolks, superfine sugar, and
cornstarch until thoroughly combined. Heat milk until
almost boiling.

2. - Gradually pour the milk into the eggs, beating as you
do so. Melt the chocolate and hazelnut spread in a
double boiler, then beat the melted chocolate mixture
into the eggs.

3. - Pour into 6 small ovenproof dishes and cover the dishes
with foil. Place them in a roasting pan. Fill the pan
with boiling water to come halfway up the sides of the
dishes.

4. - Bake in a preheated oven at 325* F for 35-40 minutes,
until the custard is just set. Remove from the pan and
cool, then chill until required. Serve decorate with
grated chocolate or chocolate curls, with or without a
dollop of whipped cream.

Cook’s Tips:

The foil lid prevents a skin from forming on the
surface of the custards.

This dish is traditionally made in little pots
called pots de crème, which are individual
ovenproof dishes with a lid. Custard pots are
fine. The dessert can also be made in one large
dish; cook for 1 hour or until set.

(Editor’s Note: This is a quick and tasty desert. If in a hurry, 20-30 minutes in the freezer chills them enough to serve. LMH)

Which ever dessert you choose, serve them with either coffee or cappuccino.

Good Luck, are you planning this as a Valentine's Dinner or an Anniversary Dinner? Either way, I think it is nice that you want to do this for your parents.

Regards,
Doc Hudson
