I am having an Indian friend over for dinner and...?!


Question: he can't eat meat so I don't really know what to cook. Does anyone have any good, tried and true recipes without meat/seafood. Any help is appreciated!

Brahman don't eat mushrooms either and some refuse to eat onions.

I work for a doctor who is Middle eastern and also a vegetarian. I have this thought everytime we have a carry-in. Vegetable Lasagna with peas, carrots, broccoli and peppers is wonderful. Really any vegetables will work. Also a burrito with broccoli, cauliflower and spanish rice with a little enchilada sauce or cheese sauce is very delicious. You could even make a homemade pizza with roma tomatoes, olives, mushrooms and different cheeses. Good luck!!

Hash Brown Casserole

1 bag oreida potato shreds hash browns (they only make one size)
1 onion, chopped or diced
1 can cream of mushroom soup
1 can cream of celery soup
3 tablespoons margarine
1/2 lb colby cheese, grated

1. Preheat oven to 350*F.
2. Mix potatoes, onion, celery and mushroom soups, and 1/2 of the cheese.
3. Coat a 9" x 13" baking dish with spray oil.
4. Spread mixture into dish.
5. Sprinkle other 1/2 of cheese evenly over top.
6. Dot margarine evenly over the cheese.
7. Bake at 350*F for 45 minutes to 1 hour or until cheese starts to brown at peaks.

You could get a Stouffer's frozen veggie lasagna and cook that.

You could try this for a dessert, if you want to have a special dessert.

There are lots of really great pasta recipes that are vegetarian. Sorry I ont have one to give you ... I always just make something up.

Remember, cheese is fine (and very popular with Indian people). You can start with cheese tortellini or ravioli, then just add some nice veggies and sauce.

There are lots of recipes for meatless dinners on the internet. Here are some ideas to get you started-
Black Bean Soup
Curry and rice
Stirfry with cashews or tofu
Meatless Spaghetti and more veggies
Veggie Lasagna with whitesauce
Butternut Squash stuffed with Stirfried rice
Kim Chi
Oven Roasted Veggies (root veggies)
Good Luck... and ask your friend what he might like to have...if your really lucky maybe he'll offer to cook!

If you're on a diet, this delicious baked/ steamed Parsi dish is especially good for you! It also looks really pretty when served wrapped-up in the banana leaf. That way each person can open their own little package!
INGREDIENTS:
6 pomfret steaks
1 fresh coconut grated fine
3 green chillies
1 small bunch coriander leaves, roots cut off and thoroughly washed
1 small bunch mint, thick stems removed and thoroughly washed
2" piece of ginger
3 garlic cloves
1/2 tsp cumin powder
1/4 tsp turmeric powder
4 tbsps lemon/ lime juice
Salt to taste
1 large banana leaf washed thoroughly, central spine removed and then cut into 6 pieces
1 tbsp vegetable/ sunflower/ canola cooking oil
PREPARATION:
Place fish steaks in a large, flat tray. Drizzle lemon/ lime juice over them and sprinkle salt to taste. Flip pieces over to coat fully with marinade. Keep aside for 20 minutes.
Put the coconut, green chillies, coriander and mint leaves, ginger and garlic, cumin and turmeric powders and salt to taste into a blender and grind to a smooth paste.

Use as little water as possible.
Divide this paste into 2 portions and use each portion to fully coat the pieces of fish on each side. Keep aside.
Pat dry the banana leaf pieces and smear lightly with oil on the smooth side. Place one piece of fish in the center of each piece of leaf and wrap into a neat parcel. Tie with twine or cotton string.
Cook in a steamer for 15-20 minutes.
Place each piece in the center of a plate and serve hot, so each diner can unwrap his/ her own parcel!
