If it is your last packet, cross your fingers and add a little extra sugar to the ingredients. It won't hurt you, the flour just might not rise.

My father, who was a baker, taught me how to "proof" the yeast by testing a small amount in water with a bit of sugar.

If you have multiple packets or a jar of yeast, you can proof it. Add one packet active dry yeast (about 2-1/2 teaspoons) to 1/4 c. warm water (between 110 and 115 degrees F or pleasantly warm, not hot because that will kill the yeast) and stir to dissolve. Add one teaspoon of sugar and let the yeast sit for five minutes. If it foams and smells like bread, you can use what is left.

buy new yeast it wont rise properly if you use the out of date stuff

There's an expiry date on the package for a reason.

You can but it's a lottery as to whether your dough will be successful

I agree with Lynne W. Your pizza will taste disgusting and the out of date yeast will be bad for you.

how out of date is it? I would be safe and just buy some new yeast
