How do you know when a plaintain is ripe to cook it?!

Question: Most wait till they're black or almost all black, but I've seen some South American dishes that use them in the green state......they're great fried......they're called tostones in the Caribbean......You slice them, smash them flat with a spatula and then pan fry in a bit of oil (of your choice).....Salt and Pepper and where's my Margarita???

What is a plaintain? LOL

When it's black, but you can actually cook it anytime before.

if its completly green with some black spots :)

When it is yellow

Green plantains are perfect for savory cooking: fried plantains, mofongo, etc. When they are yellow, they are sweeter, and you can eat them raw or use them for sweet deserts.
