Beetroot in a pressure cooker. How long would you cook it for?!

Cover the beetroots generously with water but take care not to fill the pressure cooker more than three-quarters full. Bring the water up to the boil and cook on the highest pressure for 10 minutes. Allow to cool slightly, open cooker and slide off the skins of the beetroot.

Depends on how you are cooking it - whole or cubed. Also depends how you want it, mashed or just done.
Beet contains a lot of water, hence it is better to put less water for pressure cooking. I assume you want it to be just done. If you are cooking whole, have water upto 3/4th level fo the beets. If you are cooing cubes, then reduce the water content.
Cook until the cooker releases the whistle or the pressure indicator twice. After that switch off the flame and let it cool to open the lid.
