Question: Almond Silk Pie
Ingredients:
1/2 c Butter or margarine
3/4 c Sugar
1 1 ounce square unsweetened
Chocolate, melted
1 t Vanilla
2 Eggs
3/4 c Diced roasted almonds
1 Baked 8-inch pastry shell,
Cooled
Whipped Cream
Directions:
Place the butter and sugar in a mixing bowl and beat with electric mixer until well blended. Add the chocolate, vanilla, and 1 egg and beat at high speed for 5 minutes, scraping side of bowl occasionally. Add remaining egg and beat for 5 minutes longer or until light and fluffy. Stir in all except 1 tablespoon almonds. Turn into the pastry shell and chill. Cover with whipped cream and garnish with remaining almonds. 8-10 Servings.

3/4 c. sugar
1 oz. unsweetened chocolate, melted
1/2 tsp. vanilla
1/2 tsp. almond extract
2 eggs
3/4 c. sliced almonds, toasted
whipped cream

Cream together butter and sugar until fluffy. Add chocolate, vanilla, almond extract and one egg. Beat with mixer at high speed for 5 minutes, scraping the sides of the bowl occasionally. Add the remaining egg and beat for 5 minutes more, or until light and fluffy. Stir in all but 1 tablespoon of the almonds. Pour into the baked pastry shell and chill several hours before serving. To serve, top with whipped cream and garnish with remaining almonds. Serves 6 to 8.

DIRECTIONS
Cream butter in a mixing bowl. Gradually beat in the sugar with an electric mixer until light colored and well blended. Stir in the thoroughly cooled chocolate, and vanilla extract. Add the eggs, one at a time, beating 5 minutes on medium speed after each addition. Spoon the chocolate filling into a cooled, baked pie shell.

Directions:
1. Preheat oven to 400 degrees F.
2. Combine flour, toasted almonds, first amount of sugar, powdered sugar and vanilla; blend well in food processor on low speed for 2 to 3 minutes. Press mixture on bottom and sides of a 9-inch pie dish.
3. Bake for 8 to 10 minutes; cool.
4. For filling, combine butter and second amount of sugar in small mixing bowl, beating at medium speed until light and fluffy. Add melted chocolate and almond extract, and beat until well blended.
5. Add eggs, one at a time, beating 2 minutes after each addition.
6. Spoon filling into cooked crust. Refrigerate until firm, about 3 to 4 hours.
7. Garnish with whipped cream piped neatly around edges. Sprinkle with toasted sliced almonds. Keep refrigerated. (Garnish not included in nutritional analysis.)

Cook's Tip: May substitute 2 to 3 tablespoons almond liqueur for the almond extract.

Almond Joy Chocolate Pie

Ingredients
For the crust: 20 Almond Joy candy bars (miniatures) or 10 Almond Joy candy bars (snack size) 3/4 cup graham cracker crumbs For the filling: 1/2 cup granulated sugar 1/3 cup cornstarch 1/4 cup cocoa 1/4 teaspoon salt 1 1/2 cups milk 1 teaspoon vanilla 16 Almond Joy candy bars (miniatures) or 8 Almond Joy (snack size), cut into 1/2 pieces. (Candy will cut easier if placed in the freezer for 15 minutes before cutting). 1 16 ounce container Cool Whip (optional)


Directions
For the crust: Preheat oven to 325 degrees. Lightly butter a 9 pie plate. Place ingredients in a food processor. Process until mix is throughly blended. Press processed mixture onto the bottom and up the sides of the prepared pie plate. Bake for 10 minutes. Allow to cool completely on a rack before adding filling. For the filling: In a medium saucepan, stir together sugar, cornstarch, cocoa and salt. Slowly blend in the milk. Cook filling over medium heat, stirring constantly with a wire whisk, until it boils. Boil and stir for 1 minute (Mix will be very thick). Remove from heat and stir in the vanilla. Add candy pieces and stir until melted. Pour into prepared crust; press plastic wrap onto surface. Refrigerate. Top with Cool Whip if desired.
