Overcooked Potatoes. What can I do with them ?!


Question: I tried to make potato salad and over cooked my potatoes. Is there a recipe for cream of potato soup? Any one have any ideas?

Servings: Makes about 4 1/2 cups, serving 4 to 6.


Ingredients
1/2 cup minced onion
1 small rib of celery including the leaves, chopped fine
1 carrot, grated coarse
2 tablespoons unsalted butter
2 cups chicken broth
a scant 1/4 teaspoon crumbled dried rosemary
2 1/2 cups mashed potatoes
1 teaspoon white-wine vinegar
1/3 cup minced fresh parsley leaves
Preparation
In a large saucepan cook the onion, the celery, and the carrot in the butter over moderately low heat, stirring, until the vegetables are tender, stir in the broth and the rosemary, and bring the mixture to a boil. Whisk in the potatoes, a little at a time, bring the soup to a boil, whisking, and stir in the vinegar, the parsley, and salt and pepper to taste.

MASHED POTATO PATTIES

This is a great way to use up those leftover potatoes.

Take your leftover mashed potatoes and add 1 egg and a little bit of milk. Add some onion, grated cheese and even a little bit of chopped green pepper if you like. Mix together.

Form into patties and roll in crushed crackers or corn flake crumbs. Put on cookie sheet and bake in 350 degree oven until hot. Remove from oven and place on broiler rack for a few minutes to brown on the outside. Serve with sour cream.

Mashed Potatoes are an obvious option. I would check www.recipezaar.com for recipes, Ive found some great ones there.

I'd make soup out of them by mashing them and adding milk and garlic and pepper until the taste and consistency I like.

Keep a little of the potato water if you still have it. Mash about 1/2 the potatoes in it, and dice up the rest (this will thicken your broth). Add milk, finely diced carrots, celery and onion and heat until the vegetables are soft. Add salt, pepper and garlic powder to taste.

I make a casserole out of them, take potatoes, add two cups sharp shredded cheddar cheese, onion that is finely minced , 1/2 cup of sour cream and two eggs beaten, salt and pepper. mix it well. pour into a greased casserole dish, top with bacon that has been fried and crumbled. bake at 350 in for one hour.

Sure! Potato soup would be great! An easy way is to use a can or 2 of ceam of chicken soup, milk and shredded or velveeta cheese. Or you could just use canned cheese soup and milk, add the cut up potatoes, some veggies and maybe cubed ham or bacon and there you have it!
Darn....I hate when that happens! :-)

you can make potato soup out of them, add about 2 cans of cream of mushroom soup (depending on how many potatoes you have) chopped onions, bacon bits, shredded cheddar cheese.
