Can I make a basic Meatloaf with ground beef, breadcrumbs, some ketchup and S & P?!
what's the ratio for ground beef to breadcrumbs?
as for cooking, I'm guessing 350 degrees for 30-45 minutes?
Answers: form it into a loaf and bake it? do you have a meatloaf recipe or any suggestions for mine? would you add, substitute, or take away anything from mine? I was thinking maybe some chopped onion?

I haven't made meatloaf in a while, but I'd say about a cup or so of bread crumbs per pound of meat. You also need to add one or two eggs to bind it. I always add sauteed onions (and celery, if I have it).
if you like it with ketchup...
1. ground beef
2. bread crumbs in ground beef
3. onions on top
4. ketchup or tomato paste
5. bake

I am a former chef and that is the recipe I have used myself, a egg and for a bit of contrast lightly saute the onion with a bit garlic.
As for different types, roll it into a free form log and cover it with bacon, or add some canned or fresh saute mushrooms to it with the onions, a glaze of ketchup, maple syrup and mustard is a nice tang, for 1 pound of ground beef I would use about 1/2 cup of breadcrumbs, I moisten mine with a bit of milk, not sloppy but a paste like form,the spices and that way the loaf stays juicier.
You are going to need some liquid (I use milk) and an egg or two (depending on the amount of meat) at act as a binder. For one pound of meat, I use 1/2 cup of milk and two eggs. I believe that 2 parts meat to 1 part breadcrumbs will work for you but with a meatloaf, the proportion does not have to be exact. I also use tomato sauce instead of ketchup, but that is a personal preference since ketchup is sweeter than tomato sauce. The chopped onion would be very good, as would some chopped parsley, oregano, garlic, and/or Italian seasoning.
Meatloaf is one of those recipes that can be done entirely to your personal taste. Put in what you like and as long as it holds together in a loaf shape or a loaf pan, it should be fine. I usually bake mine at 350 degrees for about one hour.
Minced onion, or if you don't want to bother with that, scoop the onion out of onion soup (leave the powder for next time because the s&p will add enough flavor) and an egg.
Meat loaf is so personal. :-) I put 2 slices of bread into a food processor for 1 1/2 pounds ground meat. I usually don't use any salt or pepper, but add a quarter cup of milk (keeps it moist) and an egg. About 20 minutes before you are done, you can put ketchup on as a sauce. I add brown sugar to my ketchup as well as a tablespoon or so of mustard. How much sugar sorta depends on how much ketchup which depends on how saucy you like it. I have kids therefore very sweet and saucy! In a loaf pan at 375 degrees you need to cook it for 1 hour and 15 minutes to 1 hour and 30 minutes. Good luck!
The ratio of bread ( or craker ) crumbs is really up to you. I only use about 1/2 cup per Lb. But I use lean beef. I also add onion and sometimes celery or even chopped parsley. Sometimes I add other herbs, oregano margoram or even tarragon. Your temp. is OK but time will depend on size and shape. Want to make it interesting, try forming the loaf around a couple of whole hard boiled eggs.
1 pound of ground beef
1 pack of salted crackers
3-4 table spoons of mustard
1 pack of onion soup mix
1/2 cup of milk
2 large eggs
salt and pepper to taste
Make sure ground beef is thawed completely (not microwave thawed) Put in a big bowl. Break the pack of crackers up into crumbs. Add all ingredients to the beef and mix well.
Put mixture into loaf pans (i split mine up to make 2) bake in oven on 350-400 degrees F for 45-60 minutes.
Another good thing to try is spreading the meat mixture out so it is flat and adding 3-6 strips of raw bacon in the middle and rolling it up cook for the same amount of time....
add 2 eggs, 1/4 cup of milk chopped onion, if you have a bell pepper The ketchup is good about 1/2 cup, Mix this all together and then add bread crumbs till it forms a nice loaf. The time is about right. Sounds good. Meat loaf is one of those things you can add what ever you have around. I use a combo of beef and pork and sometimes Turkey. about 2 lbs of meat.

I use stove top stuffing chicken flavor. I take two eggs, 1 cup of hot water, beat it and add stuffing to it. Let it set about ten minutes add two pounds of ground meat and 1/2 cup of ketchup, shape into a loaf and bake at 350 for one hour.
Oh, you definitely want to saute finely chopped carrots, celery & onion and then add it to:
good quality ground beef
ground pork
egg
bread crumbs (about 1 cup to 3 or 4 pounds meat)
milk (about 1/2 cup)
mustard
ketchup
fresh ground salt & pepper
garlic
worchestire sauce
blend everything together and place on a cookie sheet in an oval shape and then cover with ketchup, bake on 350 for about 45 minutes. It's absolutely fabulous!!!!
