What's the best way to get a perfect lettuce cup for san choy bow?!
We want the perfect lettuce cups like you get at a chinese restaurant. Seems easy but we are getting some dodgy looking ones.

Choose a small perfect round iceberg lettuce and remove theleaves carefully. You need to chill them in ice water for at least 1/2 an hour to achieve maximum 'cupness' and crispness.
choose a small butterhead lettuce and take the leaves off one by one
Chop a sizeable peice of the bottom of the whole lettuce , like half an inch then peel the leaves off and as another poster suggested, iced water ( if you aren't eating them immediately.)
