Did your mommie bake it or use the stove top?

I do a creamy mac & cheese baked in the oven by making a cheese sauce, pour it over boiled macaroni, add diced cheddar and/or velveeta cheese, top with more grated cheese and buttered crumbs and bake at 350 for 30-45 min.

Cheese Sauce
2 Tlbs butter
2 Tlbs flour
1 C milk
1 tsp dry mustard
1 C shredded sharp cheddar cheese or combination of cheeses of your choice.

Melt butter, stir in flour, let cook several minutes but stir constantly. Remove from heat and stir in milk, return to heat and stir until thickened. Stir in dry mustard and cheese stirring until cheese is melted. You may want to add additional milk to thin sauce. You can use up to an additional cup of milk.

1 C diced cheddar cheese, or combination of your choice. Good choices include but are not limited to cheddar, monteray jack, swiss, fontaina, mozzerella, or provolone.

2 C dry macaroni cooked in salted water according to package directions.

buttered crumbs

2 slices white bread crumbled (works best with slightly stale bread)
3 Tbls melted butter

Combine crumbs and butter in saute pan, cook for 2 min over medium heat then spread across baking pan of mac & cheese before baking.

Use Velveeta cheese, it's thick and creamy.

1 lb elbow macaroni
4 tablespoons butter
1/3 cup flour
2 cups milk
2 cups half-and-half
1 teaspoon salt
fresh ground black pepper (I like lots)
1/2 teaspoon curry
1-2 dash hot sauce
1/2 cup frozen peas (optional)
3 cups grated cheddar cheese (If you like spicy use a pepper cheese)
1/2 cup grated swiss cheese
1/4 cup grated parmesan cheese


Cook pasta aldente, drain and set aside.
Heat oven to (350F) degrees.
In a microwave proof dish melt butter and stir in flour.
Whisk in milk and half and half.
Microwave stirring every minute, until sauce begins to thicken about 5 minutes.
Season with salt, pepper, curry and the hot sauce.
Remove from heat and stir in remaining ingredients except for Parmesan cheese.
Pour in a buttered casserole pan.
Sprinkle top with Parmesan.
Bake for 30 minutes until bubbly and golden

Sorry about your mom. It really depends on whether the mac and cheese is baked or stovetop. Alton Brown did two versions that have been foolproof for me. My mom's is wonderful but these are almost as good and even easier! The episode of Good Eats was called "For Whom the Cheese Melts 2" and I've attached the link to the recipes below.
Whatever you do, don't fall for the powdered or squeeze bag mix. It's just not mac & cheese.

Baked Macaroni and Cheese-Amish

2 cups elbow macaroni
2 teaspoons salt
2 1/2 cups milk
8 ounces Velveeta cheese
salt and pepper
breadcrumbs

Cook macaroni according to package directions, drain, pour into casserole dish and add milk, cheese, salt-pepper, mix thoroughly.
Dot with butter, top with bread crumbs.
Bake 30 minutes at 325-350 degrees.
