Shrimp and crock pot?!

Answers: I want to prepare a crockpot meal that uses shrimp as the meat. Any suggestions? Please nothing spicy as I would like to feed this to my young daughter.

I don't know of any seafood crockpot recipes. Because seafood makes everything taste like seafood. If you put potatos and carrots in with shrimp, all of it would taste exactly like shrimp when it was ready. Not too good.
There are pressure cookers that work a lot like a crockpot, except it cooks it fast enough that the flavor doesn't get on all the potatos and stuff. Just google, "pressure cooker"
Put lemon pepper in it. Yum

1 1/2 lbs boneless chicken breasts, cut into 1-inch cubes
1 lb sausage, cooked
2 (28 ounce) cans tomatoes, crushed
1 cup onions, chopped
1 cup green peppers, chopped
1 cup chicken broth
1/2 cup white wine
2 teaspoons oregano
2 teaspoons parsley
1 teaspoon salt
2 teaspoons seasoning
1 1/2 lbs shrimp, cooked
2 cups quick-cooking rice
Combine all ingredients in the cooking vessel except shrimp and rice. Stir well. Cover and cook: Low- 8 hrs (or) High -5 hours
Stir in shrimp and rice. Cover and cook for an additional 15 minutes.
Sweet & Sour Shrimp
1 6-oz pkg frozen peas, thawed
1 13-oz can pineapple, w/juice
2 Tbs cornstarch
3 Tbs sugar
1 chicken bouillon cube
1 c. boiling water
? c. reserved pineapple juice
2 tsp soy sauce
? tsp ground ginger
1/2 lb shrimp, shelled
2 Tbs cider vinegar
White rice
Place pea pods and pineapple chunks in slow cooker. In a pan, combine cornstarch and sugar. Dissolve bouillon cube in water and add to saucepan along with soy sauce and ginger. Bring to a boil, cook for 1 min. Pour into slow cooker. Cover; cook on Low 5-6 hours. 30 mins. before serving, add shrimp and vinegar. Serve over hot rice
Here's one. It has a mild flavor - not too spicy
Slow-Cooker Jambalaya
1- 14oz can Swanson Chicken Broth
1 tbsp. Creole seasoning
1 large green pepper, diced (about 1 1/3 cups)
1 large onion, diced (about 1 cup)
2 large stalks celery, diced (about 1 cup)
1 can (about 14 1/2 oz.) diced tomatoes
1 lb. kielbasa, diced
3/4 lb. skinless, boneless chicken thighs, cut into cubes
1 cup uncooked regular long-grain white rice
1/2 lb. fresh medium shrimp, shelled and deveined
Directions:
MIX broth, Creole seasoning, pepper, onion, celery, tomatoes, kielbasa, chicken and rice in 3 1/2- to 6-qt. slow cooker.
COVER and cook on LOW for 7 to 8 hr.*.
ADD shrimp. Cover and cook for 40 min. or until done. Serves 6.
Just a suggestion: since shrimp cooks VERY fast, I'd recommend adding the shrimp in the last 5 minutes or so of cooking. In fact, I wouldn't use it in a crock-pot recipe. If she likes garlic (and who doesn't...?) Scampi is fast & easy and my daughter loved it when she was little & still does: Saute a few of handfuls of shrimp in melted butter, toss with a clove of chopped garlic, chopped parsley, and a handful or two of dried, herbed breadcrumbs. Toss together & saute until shrimp turns pink and curls up. MMmmmmmmm
I would not put shrimp in a crockpot. It cooks so quickly that there is nothing to gain with a slow cooker. In fact, you are likely to overcook shrimp in a crockpot. Overcooked shrimp will be like pink leather and it will have a mealy texture. Quickly saute or broil your shrimp; you'll be happier with the results. Shrimp is expensive and I would not want to ruin it by overcooking.
