Naa forget the thermometer, Slice them thinner, think paper thin, and at a lower heat. I heat my oil by putting it on a high heat, then reducung it to a medium to medium high heat as I fry. Or try it with a little thick chip and a more medium heat. (If you decide to go with a thermometer try to keep it around 325-350 degrees)

Oil isn't hot enough. You should be using a frying thermometer to monitor the temperature.

make sure the potatoes are sliced thin and after they come out of the oil they are flimsy but after you let them cool they do become crisp.

Make sure too, to drain well. I stick mine in a paper bag and gently shake. Add some salt to the bag too... yum!

Make sure your oil is hot enough so when you drop the potatoes in there they immediately start frying. If it is not hot enough the will soak in the oil until it gets hot and that makes them soggy. Also peanut oil is the best oil to cook them in. They will have great flavor. Good luck

As an add-on to the oil possibly not being hot enough, be sure not to fry too many at a time, as it will also lower the oil's heat

because you oil is not at the right temperature, needs to be hotter.
