Please HELP. the banana muffins i made have the most HORRID BITTER after taste.?!
Answers: recipe called for half cup each plain and whole wheat flour. 2 tsp baking pdr. egg, oil, buttermilk, bananas.
It is tasting bitter because you have added too much baking powder. Are you sure it said to add 2 tsp? Doesnt sound right. When i bake, i add half a 1 tsp only to 2 cups of flour. you are only using 1 cup flour, and adding 2 tsp baking powder. Baking powder helps the cake or muffins to rise, but if overused, can have a bitter after taste. Try making the muffins again, with your original recipie that you have, but only use half a teaspoon of the baking powder, and you will defnitly taste the difference. Good luck.
try using over ripe bananas, like the black skin ones.
Trust me, they taste much better.

which oil did you use? if peanut or olive oil, I'd suspect that.
Try soy or rapeseed oil instead, or melted butter
Did you accidentally grab the wrong measuring spoon for the baking powder or soda???Is the batter mixed up good???Maybe you just had a lump in one spot???Is there sugar in your recipe??
Two, things come to mind. One is the banana need to be very very ripe. Tons of brown spots on the banana peels is a great indication of this.
Reread the recipe and make sure you used all the ingrediants in the proper measurements.
When you make banana bread or muffins, always use black bananas. Yellow ones will always make it bitter (They're best for eating) . When I have bananas that don't get eaten before they turn black, I just toss them in the freezer (they're already wrapped with nature's peel)
Then you have some available when you're in the mood for banana bread!. Just nuke them ( in a bowl, because freezing may make them runny. But be sure to use the liquid in the banana bread)
