How long do oyster last when i buy them from a fish monger?!


Question: i want to do them as a starter for a finger food party how do i store them and how do i serve them over the period of one hour do i just leave them open on a bed of ice some people will struggle to open them thanks

I'm a fishmonger myself so hopefully i can answer correctly!! They will last for no longer than 2 days in the fridge, you have to be very careful with shellfish. The best way to serve them is definitely how you thought, plenty of ice, ready opened as they are a pain in the backside to open. Maybe some lemon juice & tabasco sauce on the side as some people like to have a bit of that on them. Good liuck & i hope your meal goes well.

my rule of thumb is buy them today eat them today to serve at the restaurant i mixed rock salt and ice and displayed them on the half shell

I would consume them the same day I purchased them.

oysters, very nice. when i buy oysters i use them the same day. When it comes to seafood i think fresh is best.
