Eggs turn green in any metalic container because they react with the metal because they are over cooked. Remember what happend to those green yolks in hard boiled eggs? It's because they are over cooked. They will hold longer if you cook your eggs for a shorter time and put them in the chaffing dish a little loose (which the health department does not recomend). Or just cook up smaller batches of scrambled eggs (recomended) oiling the pan or adding water or milk to the eggs after they are cooked (adding liquid) does not help the quality one bit.

Just cook smaller batches more often.

It means they are getting too hot.

Are you keeping the eggs in brass or some sort of non "stainless steel" chaffing dish? Those are meant to have an insert inside them to prevent contamination of food!

Use a liner either plastic or stainless steel or buy stainless steel chaffing dishes!

Just like I remember from the military days. Those eggs were allways green.

May be the pan that You are using.

i do not like green eggs and ham i do not like it in pan i do not like green eggs and ham you are letting them sit to long to eat after you have cooked them and you are applying to much heat to keep warm....
