Hi, I need the recipe for strawberry shortcake muffins???!


Question: INGREDIENTS
1/2 cup butter
1/2 cup white sugar
2 eggs
1/2 cup buttermilk
1 (8 ounce) container strawberry flavored yogurt
1 tablespoon lemon juice
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 1/2 cups chopped strawberries
Cool Whip for topping

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin, or line with paper liners.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk, yogurt, and lemon juice. Combine the flour and baking powder; stir into the yogurt mixture until just blended. Fold in strawberries. Spoon the batter into the prepared muffin cups.
Bake for 15 to 18 minutes in the preheated oven, or until the top springs back when lightly touched. Cool in the pan over a wire rack.
Serve with whipped cream topping (like Cool WHip)

2 cup flour
4 tsp baking powder
1/2 tsp salt
3 TBS sugar
4 TBS butter (or marg)
2/3 cup milk (buttermilk is ok)
1 egg yolk, well beaten (or whole egg is ok)

Combine dry ingredients in medium bowl.
Add shortening, and cut into dry ingredients.

Add milk and egg yolk together, and mix just until all dry ingredients are moistened.

put onto a lightly floured surface and knead a few times (very lightly!) and pat dough into a 1/3" thickness.

Use a cookie cutter to cut circles.
Bake on lightly greased cookie sheet for about 10 minutes, (450')
makes about 12, but if you make them larger (like 6 or 8) cook for an additional minute or 2.

Heat oven to 425°; grease 12 muffin cups.
Combine flour, 1/4 cup of the sugar, baking powder and salt in a large bowl; stir in the milk, egg and butter, stirring only enough to dampen all the flour, the batter should not be smooth.
Spoon into prepared muffin cups, filling each about 2/3 full.
Press strawberry slices into the batter, pointed side up; sprinkle each muffin with 1 teaspoon sugar.
Bake until golden, 15-18 minutes.

I just bought some this weekend and they are awesome.

Strawberry Shortcake Muffins

Ingredients:

In a large bowl combine:

5 cups flour
2/3 cup sugar
2-1/2 teaspoons baking powder
2-1/2 teaspoons baking soda
2-1/2 cups frozen unsweetened strawberries, chopped
Be SURE strawberries are FROZEN! Mix in just until coated.

In a separate large bowl mix:

2-1/2 cups low fat buttermilk
3 eggs
2 egg whites
2 Tablespoons canola oil

Pour wet ingredients into dry. Mix quickly, just until the flour disappears. DO NOT OVER MIX!!! Spray muffin tins with non-stick cooking spray. Fill each muffin tin hole 3/4 full with batter. Top each muffin with about 1/4 teaspoon of sugar.

Bake in a 350 degree oven for about 15 to 20 minutes.

Serves: 36
