Tips for making the perfect sushi?!


Question: just like last year I got suckered in to making sushi for the party of our aikido club next weekend, which means that I'll be making sushi for about 60 people. Now I'm looking for some tips and pointers from other sushi adepts on how to make the perfect sushi. my recipe is good but I'd like to mostly get some tips on rolling and cutting to get a perfect form. But any pointers, tips and tricks or recipes are welcome.

it's all about the rice - cooking and seasoning. get that right and you're laughing.
don't overload the nori with rice - easy does it. although if you've made sushi before i'm sure you know that!
my cutting tip - dip the point of your knife in water and hold it up to let the water run down the blade. do this before cutting each piece, it works a treat. and make sure your knife is sharp!
