Can I substitute whole wheat flour for spelt flour?!


Question: I just bought a whole grain cookbook and I noticed that a lot of the recipes call for spelt flour. Rather than go out and buy another kind of flour, can I just use the whole wheat flour I already have? Are there any adjustments I would need to make to the recipe?

I have done it before with good results. I also use spelt flour in place of the whole wheat in some of my recipes, and so far have had everything turn out great.

no! spelt flour has no gluten in it. wheat flour does. the gluten is what makes the "framework" for yeast bubbles to make bread rise. can be used in combination with other flours for bread, but use additional gluten.

Yes, they are pretty interchangeable and spelt does have gluten in it. I wouldn't think you would need to change anything for them, just a slight change in taste is all I think you would notice.
