Mango pepper salsa is the best!
3 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
1 1/2 medium red onion, finely chopped
1 small red bell pepper chopped
1 small green pepper chopped
3 Jalape?o chile, minced (include ribs and seeds for a hotter taste if desired)
1/4 to 1/2 cup fresh cilantro leaves, chopped
3 fresh limes juiced
Salt and pepper to taste
We like this with mexican food or grilled fish or grilled chicken or pork

4-5 roma tomatoes, half an onion, a bunch of cilantro, TONS of garlic, the juice of one onion, crushed red chilies or a small finely chopped jalape?o depending on how spicy you want it, blend it all and YUMMY!

I make pico de gallo which is chunky raw ingredients, similar to salsa.

These are all fresh ingredients, organic if possible. If you have a food processor that rough chops, it's cool, if you don't, I really like to do it by hand just for the way it turns out. I don't want it to be all one flavor.

Mine has roma tomatos, white onion, jalapenos (seeds removed in my case) cilantro, juice of limes or lemons, garlic, and salt.

You have to use a little salt, this draws the liquid out so it gets a little sloshy.

Proportions are really up to you, depending on what flavor blend you like. And leave seeds in the peppers if you really want a lot of heat. Whoo. Boy.

Mine's really easy. It's just fresh Roma tomatoes, diced. (If fresh tomatoes aren't in season, canned diced tomatoes are fine, but drain them first!) Add some finely chopped onion, juice of one lime, salt (more is better!), whatever seasoning (garlic, cilantro, etc.) that you like ... I use a Mexican Seasoning blend from World Market ........ and some very finely diced jalapeno (how much depends on how spicy you like it!).

Mix all that up and refrigerate, at least overnight. It's sooooo good!

Heat the pan, take one tablespoon oil, fine chopped tomatoes, garlic, mint leaves, red chilly and salt. Let it cook for 10min. and your salsa is ready.

Finely diced tomatoes with salt and pepper.

1 can diced stewed tomatoes
1 finely chopped small onion
1 Tbsp crushed garlic
1 - 2 finely chopped jalapenos
sea salt to taste

Mix it up serve cold or hot

one can ro-tel into blender....pulse till the thickness you like...so i cheat.....lol
