Whole wheat lasagna with turkey???!
Answers: I'm looking to make lasagna with whole wheat pasta and some healthier meat alternative to beef. I will use a low-fat shredded cheese. But what other meat can I use and how to prepare?
Actually using ground turkey or chicken is a great alternative and Ive done it many times. So go for it and ignore those that say otherwise. Ive only ever done it which those but here are a few links I did find on meat alternatives.

Gross dude. Use pork. It's the leanest meat there is and would go better with pasta (sausage is made with pork).

I'm not very good at cooking lasagna, so I won't even attempt to tell you how to prepare it. But I DO know that ground turkey makes an excellent substitute for ground beef. It tastes similar to chicken (in my opinion), and you can actually find ground chicken in the store too. My friend makes a fabulous chicken lasagna with chicken breast chunks in it.
1-jar traditional spaghetti sauce
1-pound chopped turkey breast or turkey mince(pre cooked)
16-ounces frozen chopped broccoli
1-small can mushrooms
1-small can chopped olives
24-ounces of fat free cottage cheese
2-eggs
1-tablespoon italian seasoning
2-cloves of garlic, pressed in a garlic press or minced if you don't have one
1/2-tsp salt
9-whole wheat lasagna noodles
2-cups shredded italian cheese blend
Directions
(1) Preheat your oven to 350-degrees.
(2) Spray your 12x9 inch pan with cooking spray.
(3) Combine the chopped turkey, spaghetti sauce, mushrooms and olives in a bowl.
(4) In another bowl, combine cottage cheese, eggs, italian seasoning, crushed/pressed garlic cloves, and salt and mix well.
(5) In the bottom of the pan place three lasagna noodles, then a layer of sauce mixture and last a layer of cheese mixture.
(6) Repeat with two more layers.
(7) Sprinkle the italian cheese blend on top.
(8) Cover with foil and bake for about 1-hour.
(9) Uncover and bake an additional 20-30 minutes or until cheese is brown.
(10) Remove from oven and let sit for about 15-minutes to let it "calm down".
(11) Cut into 3x3-inch slices and serve!

I say go for ground turkey and brown it like you would ground beef. I just made a cheese dip with turkey instead of beef and you couldn't even tell
Ground turkey is leaner than pork. It will taste great w/ gound turkey in it. If you're good with the seasoning, spice it up!
what the hell uses real meat other wise it will be no good at all
how about using veggies instead since you are ruining the lasagna anyway, if its not fat its not worth eating

1 lb extra lean ground turkey
44 ounces Hunts tomato sauce (1 large 29oz. can, 1 medium 15 oz. can)
1 cup chopped green peppers
1/2 cup chopped onions
2 tablespoons oregano
1 tablespoon chopped fresh parsley
1 teaspoon nutmeg
1/2 teaspoon garlic powder
1 teaspoon sugar (used to remove acid from tomato sauce, Splenda won't work)
2 tablespoons Splenda sugar substitute
1 (8 ounce) box hodgson mill whole wheat lasagna noodles (or other brand)
1 (10 ounce) box frozen chopped spinach
30 ounces about 4 cups polly-o fat-free ricotta cheese
8 ounces sargento shredded reduced-fat mozzarella cheese
1/4 cup grated locatelli romano cheese
1 cup egg substitute
1 teaspoon salt
1/4 teaspoon ground black pepper
Brown meat in large (>3qt) saucepan, drain.
Add pepper and onions, tomato sauce, oregano, parsley, nutmeg, garlic powder, sugar, and Splenda. Simmer for 1 hour. Meanwhile, continue with next 3 steps.
Cook spinach according to directions, drain well and let cool a little.
Cook lasagna according to package directions, drain. (Separate noodles and lay out flat on wax paper or aluminum foil to keep pieces from sticking together as they cool.).
Combine ricotta, romano, 1.5 cups of the mozzarella, egg substitute, spinach, salt and pepper for filling.
In a 13"x9" baking pan, pour a thin layer of sauce to cover the bottom. Arrange 3-4 pieces (1/3 box) of lasagna lengthwise over sauce. Spread 1/3 cheese filling over noodles, then another layer of sauce. Repeat layers of lasagna, filling and meat sauce.
Cover with aluminum foil. Bake at 350 for 30 minutes or until hot and bubbly.
Remove aluminum foil, sprinkle remaining 1/2 cup mozzarella. Bake uncovered about 10 minutes longer or until lightly browned.
Allow to stand for about 10 minutes before cutting for easier handling.
