What are you cooking for dinner tonight?!
Answers: I need some ideas.
Well, I made Chicken Alfredo for lunch and tonight I will be eating at lodge, so I will carry some Ranch Noodles.
Doc
Fast Alfredo
Larry “Doc” Hudson
1 - 8-ounce package Cream Cheese
? Cup (3 oz.) Grated Parmesan Cheese
? Cup Butter or Margarine
? Cup Milk
8 oz. Fettuccini, cooked and drained
In a large saucepan, stir together cream cheese, Parmesan Cheese, butter and milk over low heat until smooth.
Add cooked Fettuccini; toss lightly.
4 Servings
(As a variation, before making the Alfredo Sauce, cut up boneless chicken, pork or beef into bite-sized portions. You may also use frozen shrimp. Season it with salt and pepper, then sauté in butter or olive oil until done. Remove the meat from the heat and make the sauce. Just before adding the Fettuccini, add the meat or shrimp to the sauce, stirring until it is reheated. LMH )

I've got some nice fresh plaice which I'm going to serve poached with some prawns and a Hollandaise sauce. Baked potato, runner beans and Brussel sprouts as side dishes.
For afters, honeydew melon and vanilla ice cream with Greek honey drizzled over it.
spaghetti with meatballs and garlic broccoli
Chicken Parmesan
I got the recipe from the Kraft Food & Family magazine. You can also get their recipes off the website. They have lots of good (and quick!) ideas.

Cut up some kielbasa into pieces about 1 inch long (diagonally sliced). Heat in frying pan then add rice and any vegetable such as green beans, broccoli, sliced carrots, etc. Diced onions or peppers add some kick. A bit of soy sauce and maybe a dash of orange juice can be nice. Improvise! Add whatever leftovers are sitting around in the fridge. Easy one-dish meal and the kids will eat it.
I am making boneless, skinless porkchops. Cajun parmesan fried potatoes with a hint of mozzerella cheese. And crisp fresh snow peas on the grill maybe even some butter nut squash.
I just roasted some spaghetti squash - I am going to bake it with spinach and ricotta cheese and serve salami and olives with it and a nice big glass of wine.
