We're having baked chicken with funeral potatoes, grilled asparagus and cup cakes for dessert. I might make a green salad as well.

Lol. I LOVE your response and I shared it with the kids! They laughed. Funeral potatoes are pretty much a standard at most funerals because they stretch so beautifully. It's basically frozen hashed brown potatoes, cream of mushroom soup, grated cheddar, sour cream, onion. Baked til hot and bubbly! Report It

    my wife just made something out of her Rachel Ray book last night...

    I'm not usually a fan of most of her recipe's but this one was tasty.

    carmelize onion in some veg. oil, put red pepper flakes in it, two ounces of rum, and chopped pineapple...with most of the juice in the can but not all. Simmer until reduced and thickened...

    Grill chicken cutlets in a grill pan or frying pan...add salt to it.....when it's done, combine the onion/redpepper/pineapple sauce into it. Add some cilantro. Serve over jasmine rice (sticky rice).

    it was pretty good, and i'm pretty critical of Rachel Ray's recipes'....I think most of her stuff is a bit weird.

    Probably a tangerine. I dunno. I can't find anything to cook tonight.

    Chicken soup with pasta. Its snowing here, so I wanted something really warm.

    a hot pocket and some broccoli, I guess.

    Chicken Stew
    6 chicken breast- ahopped & cubed
    3 to 4 white potatoes-peeled & cubed
    3 lrg carrots-peeled & cubed
    3 stalks celery-thinly sliced
    1 14oz can reduced-sodium chicken both
    1 tsp salt
    1 tsp ground black pepper
    1/2 tsp garlic
    1/4 parsley
    Combine chicken potatoes,carrots,celery broth and parsley, add salt,pepper and garlic in a slow cooker or stew pot; stir to combine,put lid on and cook on low heat (slow-cooker) 8 hrs; if using stew pot bring to boil on med -high heat and then turn down to low-heat and let cook 2 to 3 hrs.

    Shepherds Pie.
    500g (1lb) Minced Lamb.(beef will do)
    1 Large onion.
    2 Beef cubes.
    1 ? C Water.
    ? C Frozen peas.
    ? C Diced carrot.
    2T Cornflour.
    4C Potato. (mashed)
    ? C Grated cheese.
    Season to taste.
    Chop onion and brown lightly, add mince and brown. Crumble in the stock cubes, add 1C of water, carrots and peas.
    Simmer for 10 minutes
    Thicken with cornflour mixed with ? cup water and cook for a couple of minutes.
    Spread out in a pie or baking dish and cover with mashed potatoes. Sprinkle with cheese and bake at 190C (375F) for 20 minutes until the potato has browned and the cheese has melted.
    If made with beef it would be called Cottage Pie.

    Carmelized onion chicken with rice.
    Preheat large skillet and add a little oil (extra virgin olive oil or what ever you have)
    Take one whole large onion and cut it up into bite size chunks and throw into pan. Cook over med-high heat for about 7-8 mins and then add chicken to the pan (salt and pepper for taste) and brown on both sides and then add in about 2 cups of chicken stock or broth. Cover and cook until is cooked through, about 8-9mins. when cooked through uncover and let the liquid cook off until it is a thick gumbo like consistancy, this will go well over your rice.
    for rice heat pan over med-high heat with one pat of butter and a couple teaspoons of oil. Dice up about one half and onion and put in. Add one cup of rice to the oil and cook for about one minute. then add one cup of chick stock or broth and one cup of water and cook for about 15 minutes covered.

    this meal takes about 30 mins and is wonderful

    I'm making home made pizza! With the works! Would you like some? It's REALLY good! I promise!

    Roast with broccoli and cauliflower and mashed potatoes YUM!
