Easy 4 Cheese Lasagna

16 ounces uncooked lasagna noodles
1 (26 ounce) can spaghetti sauce
1 pound cottage cheese
8 ounces shredded mozzarella cheese
8 ounces shredded Cheddar cheese
1 cup grated Parmesan cheese

DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).

2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

3. In a blender or with an electric mixer, blend tomato sauce and cottage cheese together until smooth. Spoon a little of the sauce mixture in the bottom of a 9x13 baking dish. Place a layer of cooked noodles over the sauce, and sprinkle a portion of the mozzarella, the cheddar and the parmesan over the noodles. Repeat layering of sauce, noodles and cheese; finish with a cheese layer.

4. Bake in preheated oven 30 to 45 minutes, until cheese is bubbly and golden.

Melt 1 Tbsp butter in a saucepan. Add 1 tbsp flour and mix quickly. Slowly pour in 1 cup milk. Heat and add 1 cup grated cheddar. Stir until cheese melts. Add to cooked, salted pasta (macaroni is best). Put into a casserole dish, sprinkle bread crumbs on top, dot with butter and bake at 350 for 1/2 hr. Comfort food.

Buy a jar of green basil pesto and some mozerella and parmasan and pine nuts.

Cook the pasta, let it cool slightly, coat it in olive oil, add 1 table spoon of pesto, chop or rip the mozerella into small pieces, toast the pine nuts and stir them into the pasta. Grate some parmasan on top. You can eat it cold or put it in the oven/under the grill until the parmasan melts.

CREAMY PASTA WITH CHEESE

1/2 lb. pasta noodles
2 tbsp. butter
1 c. Ricotta cheese
1/2 c. plain low-fat yogurt
1/2 c. Parmesan cheese
Pepper

Cook pasta until tender (don't overcook); drain. Return pasta to pan; add butter and toss until melted and pasta is coated.
Stir Ricotta and yogurt into pasta. Gradually add Parmesan cheese, stirring until sauce is warm and creamy and cheese melts. Season with pepper. Serves 4.

EASY CARIATINI

32 oz. spaghetti sauce
8 oz. pizza sauce
16 oz. thinly sliced pepperoni
16 oz. sausage, browned and drained
8 oz. mushrooms, drained
1 green pepper, chopped and fry with sausage
16-20 oz. pasta shapes, cooked and drained
Shredded Mozzarella cheese

Mix all ingredients together in large bowl. Pour into greased casserole dish and top with shredded cheese. Bake at 350 for 20 minutes or until hot and bubbly

3 CHEESE PASTA WITH BROCCOLI

2 cloves garlic, crushed
2 tbsp. olive oil
1/2 yellow onion, peeled and chopped
1/2 lb. broccoli, flowerettes only
1/3 c. whipping cream
1/2 lb. angel hair pasta
1/4 lb. Swiss cheese, grated
4 tbsp. Romano cheese, grated
3 tbsp. cheese, grated
Fresh-ground pepper to taste
Salt to taste
Chopped parsley for garnish

Saute the garlic in the oil until it just begins to brown. Add the yellow onion and the broccoli flowerettes (i.e., the tops of the spears), and saute until the broccoli is barely tender. Add the cream and pepper. You may add salt if you wish.
In the meantime, cook the angel hair pasta for just a few minutes in salted boiling water. Watch this carefully because the pasta cooks in very little time. Drain the pasta and toss with the three cheeses. Add the cream and the vegetables. Toss and serve.

You may wish to garnish this with more cheese on top. Some parsley might be nice as well. SDR

Serves 3 or 4.

Creamy Mac N' Cheese
10 minutes prep; 30 minutes cook
1 lb elbow macaroni (cooked)
1/2 cup butter
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup flour
3 1/2 cups milk
1 lb cheese, cut into cubes (I use Velveeta for creamier mac and cheese)
breadcrumbs
--Preheat oven to 350 degrees. In a pan cook butter, salt, pepper and flour and stir until smooth. Remove from heat add milk, return to heat and bring to a boil. Boil 1 minute. Remove from heat and add cheese, stir until melted. Pour over elbows, sprinkle with breadcrumbs and bake at 350 degrees for 30 minutes.

Cheesy Pasta Bake in 30 minutes
5 cups pasta, cooked
29 ounces spaghetti sauce
1 lb ground turkey, cooked and drained
1 (4 ounce) can mushrooms
1/2 cup parmesan cheese, grated
1 (8 ounce) package mozzarella cheese, shredded
--Mix sauce, meat, parmesan, mushrooms and pasta in a greased or sprayed 9x13 pan. Top with mozzarella and bake at 375F for 30 minutes.

Cheesy Chicken Spaghetti
15 minutes prep; 30 minutes cook
8 ounces spaghetti, cooked
1 (4 ounce) can mushrooms, drained
2 cups cooked chicken, diced
1 (10 ounce) can cream of chicken soup, undiluted
2 tablespoons butter
1/3 cup milk
1/8 teaspoon pepper
1 cup mozzarella cheese, shredded
--Combine cooked spaghetti, mushrooms, chicken, soup, butter, milk, pepper and cheese. Mix well and put into a 2 quart casserole dish. Bake at 350 degrees for 30 minutes.

how about some stuffed shells ? or for something diff gnocchi served w/ cheese both are quite good if you want to get away from your typical noodle , the gnocchi is a potato product , very filling + delicious served w cheese or marinara

Cook your pasta- toss with some goat fetta cheese,basil and pine nuts and a clove of crushed garlic- if you like meat pop in some pan fried pancetta or bacon- you can spice it up with some chilli too. Serve with garlic bread and a cold sav blanc-Yum
