The oats will work nicely but make sure they're fine in texture.

Here's an easy and delicious way to prepare breaded and baked chicken:

Just combine some breadcrumbs (homemade or purchased) along with and equal measure of pecans which have gone through the food processor till they're chopped finely, but not powder. Add a bit of salt & pepper to taste (add a touch of cayenne if you like). Very lightly coat the chicken with some dijon mustard (just enough so the breading will stick) and then pat the chicken in the breadcrumb/pecan mixture. Place on a baking sheet sprayed with nonstick spray or on parchment. Bake at 375 F for about 25 min or till brown on top. Delicious!!

They will be perfect.

Quaker oats are fine, but they come in different sized flakes so you may want to pop them in the blender first to make them less coarse.
