Sounds like the makings of a breaded chicken dish.

Dip them in flour (this dries them a bit so the buttermilk will coat better)
Then dip in buttermilk
Then dip in the breading mixture. If you're going to use oats I would toast them in the oven a bit first so they will be toasty and crunchy. Then I would crush them into a powder in a blender and add some herbs and seasonings. I'd go with oregeno, thyme, salt, pepper, little bit of basil, garlic and/or onion powder.
Get nice and coated and Bake on a baking tray at... Idk.. 25 mins at 350? (look up a baked chicken breast recipe and see how long they cook it for)

I'd make a sauce to go with it, try a garlic aoli which is basically like a mayonaisse that you can flavor any way you want. Dollop that on the side and serve with side dish and veg of your choice.

Marinate them in Italian dressing or 1 cup of buttermilk for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in or flour seasoned with salt, pepper and poultry seasoning - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

TEXAS PARMESAN-AND-OAT FLECKED CHICKEN

1/2 c. quick rolled oats
3 tbsp. fine bread crumbs
1/2 c. grated Parmesan cheese
2 whole boneless chicken breasts, halved and pounded
Salt to taste
1/4 c. all-purpose flour
1 egg
1 tbsp. water
2 tbsp. butter
1 tbsp. vegetable oil

Place the oats in the container of a food processor, and process until fine, 1 minute. Transfer to a shallow bowl, and stir in the bread crumbs and cheese.
Sprinkle the chicken breasts with salt and dust lightly with flour. Beat the egg with the water in a shallow bowl. Dip the chicken breasts into the egg mixture, letting any excess drip off. Then coat with the bread crumb mixture. Stack the prepared chicken between sheets of waxed paper, and let stand 20 minutes.

Heat the butter with the oil in a large heavy skillet over medium heat. Saute the chicken pieces, two at a time, until golden on both sides, about 4 minutes per side. Keep warm in a 225 degree oven while sauteing the remaining breasts.
