What do you put in your chili?!

My chili recipe (which is really my husbands) is made in the crockpot. You do have to brown the meat on the stove beforehand though.

3 lbs lean ground beef browned but left in a big pieces
1 large onion chopped
1 jalapeno, seeded and chopped
2 8 oz packages sliced fresh mushrooms
1 can of chili beans in gravy (I like Brooks brand)
2 29oz cans of tomato sauce
chili powder (I use about 4-5 Tbsp)
salt and pepper to taste

After browning the meat, add all the ingredients to a 6 qt crockpot and mix as best as possible. Cover and cook on high for about 4 hours.
At this point I add:
3 Tbsp of masa flour
1 cup of beer
and again mix in as best as possible. Recover and turn down to low and let go until ready to eat or at least an hour more....

I have a simple recipe that always comes out perfect. You can add what you want, but this a good base
2 lb ground beef
1 large can v8 juice
2 packs of mccormic chili seasoning
2 cans of chili beans

Brown ground meat
then add the rest of the ingredients.

Here is you can put all of it in the slow cooker and let it simmer overnight.

Yes! Please do use your slow cooker - and let the chili cook all day - the flavors will really come together. I always use chuck beef instead of ground beef. Buy the cheapest roast you can find and chop it up yourself (or, if you don't have time, buy stew meat). Use a bottle of beer instead of water in a recipe. Always use beef stock, never chicken stock - it's never a good idea to "mix meats" in regard to stock. Also, a small amount of chocolate (the special dark kind is great! Avoid milk chocolate) will really boost the flavor. When I say a small amount, I'm talking one or two squares from a bar. Not much at all.

4 tablespoons olive oil
1 1/2 large onions
6 garlic cloves
2 lbs stew meat
1 tablespoon worcestershire sauce
1/4 cup flour
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can black beans
1 (15 ounce) can kidney beans
1/2 (7 ounce) can chipotle chiles in adobo
1 (12 ounce) bottle beer
1 cup beef stock
2 1/2 tablespoons dried oregano
2 tablespoons chili powder
1 tablespoon ground black pepper
1/2 teaspoon kosher salt
1/2 tablespoon ground cumin
1 1/4 ounces dark chocolate
1/4 cup of crushed corn tortilla chips

Dice up the garlic and onion and sweat over low heat in the olive oil until they turn translucent. Remove from pan.

Toss the beef in a bowl in the flour and worcestershire sauce and brown in the pan you used for the onion/garlic.

Combine all ingrediants above (except beans), including beef, onions and garlic in your slow cooker and let simmer all day.

Two hours before serving rinse the beans under cold running water and stir into the chili. Adding them earlier is ok if you have to (for instance, if you want to put the chili together before you head off to work, and want it ready when you get home), they just get a little mushier. The flavor is the same, though!

Don't know about slow cookers, but I imagine it would be fine. Just keep an eye on it. As far as what to put in your chili, I would use either chili powder and crushed red peppers or fresh whole chili peppers. Anything to really spice it up. Chili is supposed to be spicey, so the spicier the better. For those with heart burn problems, make a mild batch just for them.

add a splash of vodka or deep red wine to it too

tomatoes, peppers, onions, LOTS AND LOTS OF CHEESE!

Brown meat before adding to slow cooker.
Use chili powder, cumin, garlic, onion, pepper flakes. Paprika.
I use a can of rotel. I run it thru the blender, because a couple of mine don't "like" tomatoes.
Just taste every now and then...add what you think it needs...pretty soon you will have your own recipe!

slow cooker will not be good cooking chili the only thing is good for is cooking your pinto beams in it first you should cook your ground beef and onions. bellpeppers. celery season to your taste if your meat not season right your chili want be OK together add your chili powder and chili seasoning dice tomatoes and tomatoe sauce if taste bitter add a little sugar to get that taste you want OK

im not sure what to put in it as far as cooking it & that seems to be covered already
but for toppings, cream cheese or sour cream & cheddar & fritos

Texas chili

3 lb. round steak, cut into 3/4-inch cubes
1 lb. ground chuck
1 lb. pinto beans
2 qt. tomatoes
1 lb. yellow onions
3 sweet bell peppers
5 dried chile peppers
1/2 C. chili powder
Salt
Red pepper
1/4 C. Crisco
2 T. Crisco
1/2 gal. water
1/4 C. sugar


Soak pinto beans in 1/2 gallon water overnight in refrigerator.
In a 10- to 12-inch skillet, brown round steak in the 1/4 cup Crisco, stirring frequently.
In another skillet, brown ground chuck on low heat, stirring frequently for 10 minutes.
Cut up onions and bell peppers in 1/2-inch pieces. Add to ground chuck with 2 tablespoons Crisco and saute for approximately 15 minutes, stirring frequently. Mince chile peppers very fine.
In a large 8-quart or larger kettle, combine pinto beans, browned round steak, sauteed ground chuck, onions, peppers, 2 quarts tomatoes, minced chile peppers and the 1/2 cup chili powder. Cook covered on simmer for 2 hours.
Add salt and red pepper to taste. Add sugar and simmer for 4 hours. Add additional water sparingly, if necessary.
Taste and add more chili powder, salt, red pepper and sugar as desired. Simmer 1 hour.
