What can you make with refried beans.....besides a bean burrito?!
Tortilla Stackers - layer tortilla shells with beans, sauce and cheese until desired height is reached. We usually do three or four layers. Bake in the oven until cheese melts.
Mexican Lasagna - use corn tortillas, enchilada sauce, cheese and refried beans to make a lasagna.
Bean Dip - layer refried beans, salsa and cheese in a baking dish. Heat to bubbling. Serve with tortilla chips.
Enchilada Casserole - assemle bean enchiladas in baking dish. Top with enchilada sauce. Sprinkle with cheese. Bake until cheese is melted an bubbly.
For a change, try the green sauce in place of the red in any recipe. We especially like it in the enchilada casserole.

Fry Bread Tacos
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 1/2 cups water
vegetable oil (for frying)
Meat and Bean Mixture
1 1/2 lbs ground beef
1 (16 ounce) can old el paso refried beans
1 (1 1/4 ounce) package old el paso taco seasoning mix
1 1/2 cups water
Optional Toppings
sour cream
shredded lettuce
shredded cheese
diced tomatoes
chopped onions
salsa
--For Meat/Bean Mixture (start first): Thoroughly combine uncooked ground beef, refried beans, taco seasoning mix and water. Bring mixture to a boil. Cover, reduce heat and simmer for 1 hour. Uncover and continue to simmer until liquid is reduced and mixture is thick. This usually takes another 20 minutes or so - just enough time to make the fry bread.
For Fry Bread Tacos: Mix flour, baking powder and salt together well. Add water gradually making sure the dough is stiff. Pull off egg-sized balls of dough and quickly roll, pull, and on a floured surface pat them out into large, plate-sized rounds. They should be thin in the middle and about 1/4 inch thick around the edges. Using a fork poke holes in the dough to prevent bubbles from forming. In skillet, heat 1/2-inch vegetable oil. Brown dough circles on each side until golden brown. You will need to stand over the skillet and with your fork and poke at any bubbles that may come up When golden brown, lift from oil, shake gently to remove bulk of oil, and place on paper towels to drain.
Spread meat/bean mixture on fry bread and top with your favorite toppings.
Chimichangas
1 lb cooked beef or pork or chicken
1 (16 ounce) jar salsa
1 (16 ounce) can refried beans
1 (4 ounce) can diced green chili peppers
1 (1 1/2 ounce) envelope burrito seasoning mix or taco seasoning mix
16 flour tortillas, 7 or 8 inch
16 ounces monterey jack cheese or cheddar cheese, cut into sixteen 5 x 1/2 inch sticks
salsa (optional)
sour cream (optional)
cooking oil (if frying instead of baking)
--Using two forks, shred cooked meat or chicken (should have about 3 cups). In a large skillet combine meat or chicken, salsa, beans, undrained chili peppers, and seasoning mix. Cook and stir over medium heat until heated through. In another skillet heat tortillas, one at a time, over medium-low heat about 30 seconds per side. For each chimichanga, place 1/3 cup meat mixture a top a tortilla, near one edge. Top with a cheese stick. Fold in sides; roll up, starting with cheese side. Bake, covered at 350 degrees for 30 minutes. Uncover and bake 10 minutes more or until heated through. Serve with salsa and sour cream if desired.
*Make-Ahead Tip:
To freeze: place chimichangas in freezer containers. Seal, label, and freeze for up to 6 months.
To prepare: wrap frozen chimichangas individually in foil.
Bake at 350 degrees for about 50 minutes or until heated through.
To fry: Heat about 1/4-inch depth of oil in a skillet. Cook desired number of frozen chimichangas, uncovered, in hot oil about 25 minutes (about 18 minutes if thawed) over medium-low heat or until golden, turning often.
Mexican Chicken
2 tablespoons oil
1 medium onion, chopped
1 teaspoon minced garlic
500 g skinless chicken thighs, diced
1/2 cup red bell pepper
1 tablespoon Mexican chili powder (or to taste)
1 teaspoon dried oregano
1 teaspoon cumin powder
2 teaspoons paprika
2 teaspoons chicken stock powder
1 (415 g) can chopped tomatoes
1 (450 g) can refried beans
1/2 cup water
--Heat the oil in a large pan, and fry the onion and garlic for a couple of minutes. Add the diced chicken and red bell pepper and cook for a further 4 minutes or until all the chicken has changed color. Add spices and stock powder and cook for 1 minute. Add the remaining ingredients, bring to the boil, then reduce the heat and simmer for another 15 minutes Serve over steamed rice. I like to put grated cheese, sour cream, and guacamole out for those who would like it.
Enjoy!
Make a nice omelet and add the beans in the middle along with some grated cheese and sauteed onions & garlic. Excellent!
My mom use to make a dip with refried beans and salsa sprinkled with cheese and heated in the oven. She served it with corn chips. Everyone seemed to like it. This is a great side dish for a mexican style meal
Testates are good too. You mix the beans with hamburger and then serve on a flat shell with all the trimmings.
Another idea is a 7 layer dip. This is so good and is a crowd pleaser. Look on line I know it is a popular one so a recipe should be easy to find.
in a slow cooker dump in beans and add 2 cups of soft cheese cut into cubes
1 diced onion
one tomatoe
ground hamburger precooked in a skillet and then add
one clove garlic
one jalapeno or one tiny can diced Hatch green chilis
half teaspoon of each of the following...
salt pepper cumin onion and garlid powder
cook on low for one hour and ...chili con queso!
enchilada casserole...
Crumble corn chips or tear up tortillas and place in baking dish until bottom of pan is covered
add 2 cooked and diced chicken breasts spread out on top
pre warm beans in a sauce pan and pour over the goods in the baking dish
one diced onion or half bunch sliced scallions(green looks better)
half pound of shredded cheddar or monteray jack cheese
crumble on a few more chips or tortillas
can of sliced black olives
in a seperate cereal bowl mix 2 cans of crushed tomatoes, 2teaspoons of pepper, cumin, and chili powder.
pour mix over the top
cover with foil and bake at 350 for 45 minutes
you can put them on top of nachos
you can put them in mexican lasagna
you can put them in a layered mexican dip
