Fresh Mozzarella....?!


Question: My husband brought home fresh mozzarella from the store, which normally I would make a tomato capezo salad with. However, I am recently disabled and can't drive and we have no tomatos in the house.

Any good suggestions on what to do with the mozzarella? I hate to waste it, we have fresh mushrooms but not many other fresh veggies as it is deep winter where we are and the veg at the store didn't look good this week. We have lots of frozen veg though.

marinate the mushrooms in a vinegrette of olive oil and vinegar, dash of salt and pepper, some herbs. The chunk the mozzarella and put in with the mushrooms. Add chopped onion and garlic (or powder if you have it) . Use as a salad with or without pasta.

If you have pasta, cook and top with above.

For goodness sake, don't waste it, eat it all by itself!

Make fondue and serve immediately, with tortillas or tortilla chips. You can even add finely chopped veggies, like tomato, chili and mushrooms.

Or make cheese sandwiches.

Or quesadillas. You don't have to fold them, just make a tortilla-cheese-tortilla layer, heat, flip over, and cut into wedges. Easy and delicious! Serve with beans, and a side salad.

Hmm... you could make a Margareta pizza.

Or thick sliced Italian bread with a slice of mozzarella on top with salt and pepper then put it under the broiler until melted.

Or mix with the fresh veggies you have on hand and toss with balsamic and olive oil.

Or chicken Parmesan

Chop it up in a salad with some balsamic vinegar, and basil if you have that.

A lettuce salad sounds good to me and add whatever you would like to add and then serve with...Bruschetta....Saute mushrooms,garlic,basil and onions if you like.Slice fresh mozzarella,place on a slice of toasted french bread sprinkle with your sauteed mixture and fresh ground salt and pepper.
