Good Old Fashioned Pancakes

INGREDIENTS

* 1 1/2 cups all-purpose flour
* 3 1/2 teaspoons baking powder
* 1 teaspoon salt
* 1 tablespoon white sugar
* 1 1/4 cups milk
* 1 egg
* 3 tablespoons butter, melted

DIRECTIONS

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Buttermilk Pancakes

INGREDIENTS

* 1 1/4 cups all-purpose flour
* 1 egg
* 1 1/4 cups buttermilk
* 1/4 cup white sugar
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/4 cup vegetable oil

DIRECTIONS

1. Preheat a skillet over medium heat. Combine all ingredients in a blender. Puree until smooth.
2. Pour batter onto the griddle, to form 5 pancakes. Flip pancakes when edges appear to harden. Cook pancakes on other side for same amount of time until golden brown.

Bacon & Corn Pancakes

(This recipe yields 4 servings)


3/4 c Milk
2 Tablespoons melted butter
1 egg - beaten
1/2 c corn kernels
1 c flour
2 tsp. baking powder
2 Tablespoons sugar
1/2 tsp. salt
6 slices bacon
Maple syrup for topping
Combine milk, melted butter, beaten egg in one bowl. Stir in corn and set aside.

Combine flour,baking powder,sugar and salt in separate bowl. Pour corn mixture into flour mixture and stir briefly to moisten.

Heat griddle to medium. Place bacon slices on griddle and brown on each side until crispy. Drain fat and coarsely chop or crumble into corn batter.

Ladle 1/4 cup of batter on the griddle and cook pancakes over medium-high heat until air bubbles form on the top.

Flip pancakes over and cook until nicely browned. Serve with maple syrup.

well make your pancake mix the usual way which is 2 eggs Self Raising plain add milk and mix ,when the pancake are doing add mixed fruit cocktail or your favourite fruit roll them up like tortilla wraps ,put them in a square dish make up some custard pour it over them and leave it in the fridge to go cold and set eat it just like that

my fav is pancakes w/ an egg in the center .
