Answers: I have some chicken parts like quarterlegs and quarter thighs and I would like a good easy recipe this is what I have on hand(this is my only day off for college that I can cook at home so please help) stick butter, Italian seasonings, salt, pepper, garlic power, dryed basil, and dryed Cilantro, seasoning salt. ( I know I need to go grocery shopping bad, LOL)Plus I have some sweet potatoes. What can I do with them other than baked them whole? Maybe make sweet potatoes chips? I saw a recipe on the show "You are what you eat" and you can make chips from sweet potatoes I could never find that recipe. It goes something like this......... slice potatoes thin, drizzle with olive oil( I don't have any more) and so on....... Please help me. I know there are some wonderful cooks out there. :D Thanks you very much.
Set your oven on 350. Season the chicken parts with all the seasoning you have, put it in foil pan and place in the oven to bake for about an hour..use your discretion. In the meanwhile, place your sweet potatoes in the microwave until cooked, peel the skin off, mash them. In a sauce pan, melt butter, cinnamon and brown/white sugar..once its melted, pour over the sweet potatoes and whala...

Sweet potatoes - you can bake them whole and add butter and cinnamon and sugar to them - they're excellent that way!
if you cut the chicken up and fry them with salt and pepper, it's really plain but my grandmother makes it and it is very good.
the sweet potatoes you can make a souffle' with.
i dont a recipe on hand to give you but there are several simple ones on the internet. and they arevery good.
with the chicken, it is good with cabbage if you have any or mashed potatoes.

here is a sweet potato chip recipe:
SWEET POTATO CHIPS
2 lb. yam or sweet potatoes, scrubbed and sliced 1/8 inch thick
2 tbsp. cold pressed safflower oil
2 tbsp. spicy, salt-free vegetable oil
Place the sliced potatoes in a bowl. Sprinkle with oil and mix thoroughly. Spread the potatoes in a single layer on a non-stick baking sheet and sprinkle with vegetable seasoning. Bake in preheated 450 degree oven for 12 to 15 minutes or until nicely browned.
Russet potatoes may be used instead of sweet potatoes. This is a cholesterol free recipe.

You could either roast the chicken pieces, or sautee them and then let them finish in the oven. If you had wine, broth, or tomato sauce you could cook them in the pan after they are seared. Otherwise you'll need to let them cook at least partially in the oven. Or, if you have a slow cooker, put them in there with the seasonings and a little bit of water.
Sweet potato chips I can't help with, I don't know how to make them without a deep fryer. You could cut them up, drizzle with oil, salt, and italian seasonings, and roast them that way.
the chicken leg quarters can be made up simple. place in a baking dish and sprinkle with your seasoning salt. and place in the oven at 350 for an hour or untill the internal temp is at 170-180. at the end of the cooking time you can put bbq sauce on them. and bake for a bit longer. with the sweet potatoes have you tried this one. peel and dice place in a baking dish drizzle with 4 tbsp butter and sprinkle cinnamon and brown sugar and bake for an hour covered

Once a month I purchase a 10 pound bag of leg quarters. I boil them in a large pot with onion, celery, garlic, carrots. I then have broth available also. I make many things form this after deboneing the chicken, Chicken salad with sweet grapes, chicken casserole, chicken and noodles..
My favorite way to use sweet potatoes is bake them in the microwave... cut open,add butter, sprinkle with brown sugar and drizzle with a bit of maple syrup.

Since this is your only day off fm college, use it wisely and make a meal that will last you throughout the week till you get a chance to cook again. Try making a delicious chicken stew using all the ingredients you've described. Fill the pot with some water and add olive oil, stick of butter, chopped garlic, chopped peeled potatoes (about a couple of them, cuz they are cheap) chopped whole onion, your dried seasonings, tomatoes, tomato paste for a nice base. Bring to a boil then down to a simmer about 1-11/2 hours or till chicken is tender. The potatoes will thicken the broth into a nice rich stew. You can save this and eat this throughout the week. As for the sweet potatoes, this can be your dessert. Boil the chopped sweet potatoes till soft. Strain them and mash them up in a mixing bowl into a soft consistancy. Add some honey, vanilla, cinnamon and some butter. Whip into a soft pudding. Refrigerate and eat for dessert throughout the week. It's so good and has lots of vitamin C. The stew is rich and hearty and will last you and save you a bundle! Hope this helped. I had to "make do" too while I was at school.
well with the odd chicken pieces i suggest you get some flour plain or self raising it dont matter which add your spices you like eg curry powder, cummin, basil,thyme, and breadcrumbs, chili flakes etc mix all together in the dry flour then get a beaten eggs whisk it up and dip the chicken potions into the eggs and then roll it in the flour until covered and then slowly fry until it is golden brown thats what i call home made kentucky fried chicken, has for the potatoes i suggest you cut them into wedges get some eggs whisk them up and add chili powder,curry powder dip the potatoes into it and bake them.

As for the chicken, you can cook it up nicely in a frying pan. Brown the chicken first, then spoon a tablespoon of apple butter (not apple sauce, apple BUTTER) over each piece, cover and simmer on medium heat (around 325 degrees) for forty minutes. Meantime, please forget the idea of sweet potato chips. I tried them and they're awful! Peel 'em, cut 'em into small chunks and boil 'em in just enough water to cover. Boil 'em for twenty minutes, then pour off the water. Put 'em in a mixing bowl with a half cup of half 'n half and a teaspoon of cinnamon and use the mixer to whip 'em up into a nice thick batch of mashed sweet potatoes. Keep that warm while you cook up some sweet corn and peas, and when all is ready, serve the chicken with the apple butter on top. Put a quarter cup of the mashed sweet potatoes alongside the chicken for each dinner plate, and serve the corn and peas in a small separate dish after you hit 'em with a brief squirt of spray margarine. Top off with your choice of drink and dessert, and youse gots a nice, quick and easy supper.
1 cut-up broiler-fryer chicken, skin removed
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon seasoned pepper
4 medium sweet potatoes, cooked, peeled, cut into 1/2-inch slices
2 teaspoons grated orange peel
3/4 cup apple juice
Mix together ginger, nutmeg and pepper; sprinkle on all sides of chicken.
In shallow 2-quart baking dish, arrange chicken in single layer. Place sweet potatoes around chicken. Sprinkle with orange peel and pour apple juice over all.
Bake in 400°F. oven about 1 hour or until fork can be inserted in chicken with ease, basting with liquid in dish several times
