Curried butternut squash soup too hot. How can I cool it, so it can safely be reheated?!


Question: Butternut squash my fave! I take it you mean hot as in spicy.....try stirring in some soft cheese. I've even added cream and as long as it's re-heated thoroughly (only once) it'll be fine.
Or how about AFTER it's been re-heated adding a swirl of cream or plain yoghurt- not only will it cool the flavour it looks good too. Poor it off the back of a spoon.
If you did mean cooling the temperature the fridge is fine, or if you're in a hurry float the bowl in a bowl of iced water. You can freeze it too.

I have made that a number of times. It rocks! I had no problem putting it in the refrigerator and then reheating it later.

The best way to quickly cool soup is to put a container of ice in the center of it. A frozen bottle of water works very well, as do zip lock baggies of ice.

I take it you mean the curry is too hot . If so let the soup cool and after reheating it add Single Cream or Elmlea. That will counteract some of the heat from the curry.
