Hey there, Mexican food addict too, eh?? Me too, and I live in Southern California!!! And there are WORSE things than being addicted to Mexican food.....like nicotine or booze.....think about that.....I've found a LOT of very precise and good recipes at FoodNetwork.com (the food channel) just enter Mexican recipes in the search engine and you'll get about 2000 different (and kitchen tested) recipes......Enjoy!!

Me too. How about Fajitas. I use the French's spice mix version and I think it tastes the best. The recipe is on the back of the spice packet.

try making mole, its easy. first find the Mexican isle in your grocery store, there you will find an 8oz glass jar of mole paste, and buy some chicken. boil the chicken without the skin, then empty the mole paste into a deep sauce pan, use medium heat and add chicken broth that was left from boiling the chicken. stir the mole until it dissolves completely adding broth to thin it out, the mole should be thick but not like ragu more like a chicken gravy. add a a couple of table spoons of honey to balance the heat and when it comes to a boil add the chicken pieces to the mole. this dish is usually accompanied with Spanish rice. Spanish rice you simply add a cup of rice to a small pot, fry the rice with a little oil until a light brown, add add about 4oz tomato sauce add two cups of water and add a pinch of cumin and a cube of bullion, let it come to a boil cover it and let it simmer until rice fluffs up and absorbs all the water. sorry i don't know how to write out recipes but good luck and let me know if you tried it.
