Bacon and Egg Pie Recipes please (single serve)?!


Question: I have a single serve pie maker and wish to make Bacon and Egg pies, but the only recipes I can find are ones for large pies, not small ones like the ones I want to make. I want a simple recipie and am using Puff Pastry, please help :)
Also do I wisk the eggs? I have seen some recipes where you do, others where you dont??? And do I layer bacon at bottom of pie, throughout or at top?

Sounds good sweetie! Of course it will depend on the exact size of your pie maker (and what size eggs you plan to use) but if it is single serve try one jumbo egg or 2 small. Whisk with a few drops of milk. You can try the bacon anyway you want - it won't hurt anything. Don't overcook - try inserting a knife and if it comes out clean your good.

how to make several individual pies some of which you can freeze

Ingredients:
1/2 sheet frozen shortbread pastry
1/2 sheet frozen puff pastry
3 eggs
1/4cup coarsely chopped fresh parsely
1/4cup coarsely chopped bacon

Directions:
While the pastry is thawing, rub some butter or margarine on the inside of a shallow glass pie plate to prevent sticking. Place the single sheet of shortbread pastry in the base of the plate and carefully smooth down.

Carefully crack your three eggs so that the raw yolks and whites are arranged fairly evenly inside the pastry-lined dish. Set some of the white from one egg aside in a cup. Sprinkle the bacon and parsely over and around eggs. Place the single sheet of puff pastry over the pie plate and crimp the edges down with a fork. Trim the excess with a knife. Brush the puff pastry top with the egg white.

Bake the pie in the oven at about 325oF/340oF (160oC/170oC) for about 45 minutes. Check that the base is cooked and not soggy before serving.

Little bacon and egg pies

Ingredients
3 sheets frozen ready-rolled puff pastry, thawed
500g bacon, thinly sliced
1 1/2 cups sour cream
1/3 cup chopped chives
12 eggs
Method
Preheat oven to 200°C. Lightly grease 12 x 3/4-cup capacity Texas muffin pans. Cut pastry sheets into quarters. Gently ease a square of pastry into each muffin pan.
Cook bacon in a small frying pan over medium-high heat for 3 to 4 minutes or until light golden. Drain bacon on paper towel and allow to cool for 5 minutes.
Place three-quarters of bacon into base of each pastry shell. Whisk sour cream, chives, salt and pepper until well-combined. Spoon mixture over bacon. Crack egg on top of sour cream. Top with remaining bacon.
Bake for 25 to 30 minutes or until pastry is golden and filling is cooked. Allow to stand for 5 minutes before removing from pan. Season and serve hot.
