Not authentic Mexican but good though and fun to make and eat.

Taco Boats

1 Package Wonton Wraps (found in the fresh vegetable section of the grocery hanging)
1-2 pounds hamburger meat
1 sweet onion chopped
1-2 packages of Ranch Dressing Mix (dry)
Grated Cheddar Cheese

Pre-bake the Wonton Warps in your muffin tin to form a bowl. They come 60 to a package, I usually make 48 of them with two pounds of ground beef. Brown your meat and onion and drain. Add the Ranch Dressing Mix and mix well. Spoon into the bowls you pre-baked and top with grated cheese. Pop back in the oven to melt the cheese and your done.

Note: For each pound of meat use one package of mix.

Toppings can range from sour cream, shredded lettuce, salsa, olives and more.

Tacos with everything!

cook chicken on the grill with fajita seasoning rubbed in.
in a skillet, start with a little butter and olive oil, when hot, add sliced onions, green peppers, let cook a few minutes, then add chopped tomatoes and garlic. season with fajita seasoning and add about 3/4ths of a beer. let this cook down and drink the rest of the beer and dice or shred chicken. Add the chicken back, taste and re-season if needed. warm up your tortillas and get another beer and enjoy!

Pork Carnitas

I make Chicken Enchiladas with a green chili sauce. Served with Mexican Rice I make in my rice cooker and finish it with Sweet Corn Cake.

I make three different kinds of enchilidas. Two are chicken, one is beef.

Sourcream chicken enchilidas:

1 large can cream of chicken soup
1 small container sour cream
1 can green chiles
1 can sliced olives
1 small chopped onion
grated Mexican Blend cheese
2 or 3 cook chopped chicken breast
or I use one whole chicken boiled & deboned
flour tortillas

Mix all the ingredients except the grated cheese. Put a blob in the bottom of a 9x13 pan. Take tortilla put a small blob of the mixture in the middle and some cheese. Roll and place in pan. Continue until pan is filled, top with remaining sauce and some cheese. Cover with foil (tented a bit so it doesn't stick to the cheese). Bake at 350 for about 30 minutes until bubbly. You can double the sour cream and soup to make it nice and creamy.

Mole chicken enchilidas

1 jar mole sauce (paste in glass jar)
chicken broth
chopped cooked chicken
corn tortillas
Mexican white cheese (found at Mexican specialty shop)

Mix 2 or 3 tbl's mole with chicken broth in a saucepan on the stove until blended and consistency you like. I make mine nice and creamy like a fondue chocolate consistancy. Dip each side of tortilla to soften, put some chicken in tortilla and rull, put in 9x13 pan, continue til pan is full. You can pour some of the mole sauce over the top if you want, or if you feel there's enough sauce from dipping the tortilla, don't. Then top with cheese and bake on 350 until hot. Mole can be spicy. The more chicken broth you add the less heat you'll feel.

Beef enchilidas

1 large can mild enchilidas sauce
1 small container sour cream
1/2 cup heavy cream
grated Mexican blend cheese
chopped onion
ground beef
corn tortillas
oil

Saute beef & onion in pan. Set aside.

I mix the sauce with sour cream and heavy cream because the enchilida sauce is too hot for our family even though it says mild. Taste it and see if you like the heat, if you don't, tone it down with the sour cream and heavy cream, otherwise, leave the cream's out.

Heat oil in pan til hot, dip tortilla in oil on each side. I wait for one side to begin to puff and then flip. place on several paper towels and try to spread the tortillas around on the papertowels so they can cool down. I do about 10 tortillas at a time. Then I remove the pan from the stove and work with the 10 tortillas.
Put a bit of the enchilida sauce in the bottom of a 9x13 pan.

I take a cooled down tortilla by putting it on a folded paper towel in my hand, place a glob of hamburger mixture & some cheese in tortilla, roll and place in the pan. Continue this until all the tortillas are used and then start over with the oil until you use as many tortillas as you choose and fill the pan. I do about 30 tortillas but I fill 2 9x13 pans. Maybe more tortillas. I do a lot.

Cover with extra sauce and then top off with cheese. Cover with foil and bake on 350 until hot. About 30 minutes.

I serve refried beans and Spanish rice with all three of these recipes.
