you can use all but some peope prefer white and light green parts

Use both (green will add color as well as flavor). For most recipes serving 4-6; about 2 cups of thinly sliced Leek will do. Sometimes, this is the whole Leek; usually not.

clean it well, sand is in them. after you clean, you can use all of the leek but the very bottom of the bulb. i like potato leek soup with bacon, sour cream, sea salt, and black and red pepper. yummmm

Just use the white and pale green parts, but wash them well. Lots of dirt gets between the layers.

Scallop potatoes bake for awhile and leeks are exspensive. Like others have suggested you can use every part of the leek the question is how and when. With Scallop Potatoes you can use the coursest green parts as they will cook for 30 minutes to 1 hour. Like for the pot roast answer sweat the leeks till glossy in the bacon fat or other oil and combine with mixture. DEFINATELY FINELY SLICE AND DICE THESE COARSE LEAVES!!! (1/8th inch). By cutting from top of leaves down you can remove what you need and the leek will store for several more days as long as you do not cut off the roots. This tequnique has saved me lots of money in leeks and other alluims. EcNobody
