It would be depending on the seasonings. If you think about it...Irish stew can be made with beef or lamb and you add potatoes, leeks carrots and conions....mmmmmmmmmm I think I'll make that tomorrow.

Definately!! I use leeks in my dutch oven pot roast stew. Lightly brown the leaks in olive oil or a half canola and half butter mixture to bring out their best qualities. This tenique will bring much more flavor to your beef dripings. Also add some carrots and celery to the sweat with some garlic at the end. with a careful roasting you should fantastic eats. EcNobocy
Yes, fantastic. The leeks will get mushy as the pot roast cooks., flavoring and thickening the sauce. When the beef is done, mash the leeks into the pot liquids for a great gravy.
