What's a healthy way/recipe to cook pork chops?!

I would just throw them on the grill, then serve them with some apple sauce or something. I do it all the time. Just make sure you get good pork chops because you are really relying on the flavor of the meat!

I suppose the healthiest way would be to broil them so the fat drains away. Having said that, however, I like to trim them well, season with salt, pepper and garlic and brown them in a sautee pan. As I turn them to brown the second side I add a large chopped onion and sautee that too. When the onion is translucent and the chops brown, I add about a cup of water to the pan, cover it, lower the heat and cook for about 30 minutes. We serve them with mashed potatoes, applesauce and sauerkraut.
Here are two recipes I enjoy.
Caramel Apple Pork Chops
* 4 (3/4 inch) thick pork chops
* 1 teaspoon vegetable oil
* 2 tablespoons brown sugar
* salt and pepper to taste
* 1/8 teaspoon ground cinnamon
* 1/8 teaspoon ground nutmeg
* 2 tablespoons unsalted butter
* 2 tart apples - peeled, cored and sliced
* 3 tablespoons pecans (optional)
1. Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
2. Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
3. In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
4. Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.
Grilled Brown Sugar Pork Chops
* 1/2 cup brown sugar, firmly packed
* 1/2 cup apple juice
* 4 tablespoons vegetable oil
* 1 tablespoon soy sauce
* 1/2 teaspoon ground ginger
* salt and pepper to taste
* 2 teaspoons cornstarch
* 1/2 cup water
* 6 boneless pork chops
1. Preheat an outdoor grill for high heat.
2. In a small saucepan, combine brown sugar, apple juice, oil, soy sauce, ginger, salt , and pepper. Bring to boil. Combine water and cornstarch in small bowl, and whisk into brown sugar mixture. Stir until thick.
3. Brush grate lightly with oil before placing pork chops on the grill. Cook over hot coals for 10 to 12 minutes, turning once. Brush with sauce just before removing chops from grill. Serve with remaining sauce.
Something very simple is to lightly coat with flour, then sprinkle salt, pepper, and lemon juice on both sides and bake. Good luck with the diet!
Since the South Beach Diet calls for a minimum amount of "bad fat", I would recommend cooking with a good olive oil and getting good 80-95% lean pork chops.
Easy, fast recipe
Since your not allowed fruits or anything with high amounts of sugar, my best bet would be this recipe:
2 pork chops
1 bunch of asparagus, or spinach (nice dark green veggie)
1 lemon
2 cloves of garlic
1/2 cup of worchestire, or balsamic
olive oil
Tablespoon of any dried herbs you prefer (rosemary, thyme, parsley etc)
salt and pepper
Marinade:
In a zip lock bag, put in your chops, add pepper, herbs
Half of the lemon's juice
The balsamic or worchestire sauce
A few generous pours of olive oil
Close up the bag, mix around until coated, put in the fridge for a few hours or overnight is best
Prep:
cut asparagus at the point where it breaks or where it bends, since the bottom half is not as edible
Slice garlic into thin slices
Juice the remaining lemon
Cooking:
Take out your chops and leave till room temp
Set your oven to broil or highest temp
In a hot pan add olive oil, then garlic, cook for 1 min or until you smell it
Add your asparagus and mix, add lemon juice, salt and pepper
Add 1/4 cup of water and reduce
Put your chops into the broiler and cook for 5-7 min until the chops are bubbily, brown and delicious
Serve immediately, enjoy
I'm not sure what is allowed in the phase one of the south beach diet but here is one that is a little different but worth a try.
Chops salt and pepperd on each side.
Put the chops in a baking dish
Top each chop with the following:
1 talblespoon brown suger
1 tablespoon ketchup
1 slice onion
and 1 slice lemon
Bake at 350 until done.
