Do not eat farm-raised fish of any kind as sushi. Salmon that is wild caught does not normally carry parasites in the meat as do bottom dwelling fish like cod, haddock or snapper. As long as the salmon does not have a acrid smell of any kind and has a "light seawater" smell too it, you are good to go...Pass the pickled ginger, soy and wasabi!

Did you get sushi quality fish?! You can't just buy any kind of fish from the grocery store!

You need sushi quality. It has to be treated differently from fish that is going to be cooked. This includes a freezing treatment to kill parasites.

I would not just use the fish you can buy in any supermarket. You don't know how fresh it is. Here are some tips about buying fish for sushi.

.

There is a huge difference between supermarket salmon and sushi grade salmon. I f you didn't purchase sushi grade salmon I wouldn't eat it raw.
