Hi,
I sauteed some garlic in olive oil, added one can chicken broth , now I'm slowly braising some frozen chicken breasts. Will add more chicken broth, frozen chopped spinach, and canned diced tomatoes.
add pepper
remove chicken breasts and dice up one, store others, add to bowl with warmed leftover rice, some romaine lettuce and a salad dressing made from the olive oil from sauteing the garlic, balsamic vinegar, bottled lime juice, and Dijon mustard
will eat the soup over more leftover rice later, or great with pasta - don't forget the Parmigiano!
happy eating!

I had 2 BK chicken tender sandwiches and some fries. and for desert a glass of choclate milk.

Sauteed chicken over rice is awesome. You've got so many "sauce" options (doesn't have to be Asian); the chicken cooks up super fast if you cut it into 1 inch squares.

My new "sauce" is roasted onion, crushed garlic cloves, lemon juice, dried rosemary, and black pepper. Tasty!

If you don't have breadcrumbs, make your own! Grate a few pieces of bread (toasted if you prefer), mix with some oregano, parsley, basil, garlic powder, onion powder, black pepper, and parmesan cheese if desired. Thaw chicken breasts and coat completely in breadcrumbs. Place on greased baking sheet and bake in a 400 degree oven until cooked through (time depends on size of chicken pieces, but the chicken I use takes around 20 minutes). Flip chicken halfway through baking (when the chicken is golden on top). I like to serve this with rice or salad. Cook rice in chicken broth on stovetop. Add desired spices and herbs.
*Breadcrumb coating is also great on fish.*

Enjoy!

A ground pork patty, mashed potatoes, peas and freshly made apple sauce. I haven't eaten yet and now I am starving. Hopefully the next hour will pass quickly.

I made a roasted lemon and garlic chicken, white rice and a green salad. It was awesome!!! For dessert I whipped up some chocolate chunk walnut cookies.

We had pot roast with carrots & onions, served with a slice of freshly baked whole wheat bread. It was scrumptious.
