Substitute butter for shortning?!


Question: i am making cupcakes from scratch and the recipe calls for 1/2 cup shortning. could i substitue 1/2 cup butter for it and get the same results?

Yes, butter and shortening can be substituted for each other in equal ratios. I personally prefer shortening in my baked goods though, not for flavor, but for texture. Shortening will make things chewier and moister for longer. Butter will dry out sooner and tends to make your products have a crunchy texture, but that shouldn't be a problem with your cupcakes, since they won't be touching the pan (cupcake papers) and cake batter should be very liquid. But butter vs shortening plays a big part in a cripsy cookie vs a chewy cookie, because cookie dough in comparision is much drier.

Yes it will work, you can also substitute applesauce for the shortening if you want lower calorie.

Yes but for one cake batter recipe I use 2 sticks of real sweet salted butter if your recipe calls for a pinch of salt then use unsalted sweet reall butter

Yes but keep in mind that butter has water in it that shortening doesn't have so you also need to modify the liquids. For every cup of butter there are 6 teaspoons of liquid that shortening does not have. Now this is butter, if you really mean margarine, I assume it doesn't have liquid, but I really don't know, I don't use margarine.

you will get a better finished product using all butter. I never use shortening for baking, I think it tastes awful. Butter is the way to go for great baking.
